Before you start

Before starting, make sure the slow cooker is clean and ready. Cut the chicken thighs into uniform pieces if they are very large. Wash the broccoli and cut it into bite-sized florets. Measure the shredded cheese and have the butter ready.

If serving with rice, start the rice cooker or pot of rice before assembling the slow cooker so everything finishes around the same time. No other prep is needed—this truly is a dump-and-go meal.

Ingredients at a glance (6)
  • 1 1/2 lb boneless skinless chicken thighs
  • 3 cups fresh broccoli florets
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 1/2 cups shredded sharp yellow cheddar cheese
  • 2 tbsp butter
  • steamed white jasmine rice, for serving

Instructions

Layer and Go

  1. Layer the Chicken and Broccoli
Place the chicken thighs in an even layer across the bottom of the slow cooker. Scatter the broccoli florets around and between the chicken pieces, tucking them in so they are mostly surrounded by the meat.
Look for The slow cooker bottom is covered with chicken and broccoli in a single layer.
Tip Cut any extra-large thighs in half so they cook evenly.
  2. Add the Soup, Cheese, and Butter
Spoon the condensed cream of chicken soup over the center of the chicken and broccoli. Sprinkle the shredded cheddar cheese evenly over the top, then dot with the butter. Do not stir.
Look for The ingredients are layered in the pot, with soup, cheese, and butter on top.
Tip Leaving the mixture unmixed helps the chicken stay juicy and the sauce come together during cooking.

At the end of this phase, all ingredients are in the slow cooker, with the chicken on the bottom, broccoli nestled around it, and the soup, cheese, and butter on top. The mixture looks rustic and chunky, with sharp cheddar and pale soup contrasting against the green broccoli and raw chicken. Nothing is stirred, and the slow cooker is ready to be turned on.

Slow Cook

  1. Slow Cook Until Tender
Cover the slow cooker and cook on low for 4 hours, or on high for 2 1/2 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The broccoli should be tender but still bright green.
Look for The sauce is bubbling gently around the edges and the chicken is pulling apart easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to lift the lid during cooking—each peek adds time.

After the cooking time, the kitchen smells of rich chicken and melted cheese. The sauce is bubbling at the edges, and the chicken is visibly tender, pulling apart with a fork.

The broccoli has darkened slightly but remains vibrant green. The cheese has fully melted into the sauce, creating a golden, creamy base. The chicken should register 165°F (74°C) on an instant-read thermometer.

Shred and Serve

  1. Stir and Shred the Chicken
Using two forks, gently shred the chicken thighs into large chunks right in the slow cooker. Stir everything together so the broccoli and chicken are coated in the creamy cheddar sauce.
Look for The chicken shreds easily and the sauce is smooth and creamy.
Tip Shred only the larger pieces; leaving some chunks gives a better texture.
  2. Serve Over Rice
Spoon the hot chicken and broccoli mixture over steamed white jasmine rice in bowls or onto plates. Serve immediately.
Look for The dish is steaming and the sauce is thick enough to cling to the rice.
Tip For extra richness, spoon a little extra sauce from the slow cooker over each serving.

After shredding and stirring, the dish is a cohesive, creamy medley of chicken, broccoli, and cheddar sauce. The sauce coats the back of a spoon, and the chicken is in moist, pull-apart chunks. The broccoli is tender but not mushy. The finished dish steams invitingly and is ready to be spooned over rice.

Common mistakes

One common mistake is lifting the lid too often to check on the food. Every time the lid is lifted, heat escapes and adds 15–20 minutes to the cooking time. Another is overcooking the broccoli—if using frozen, add it later.

Also, avoid stirring the ingredients at the beginning, as this can cause the chicken to dry out and the broccoli to break down. Finally, do not use low-fat or fat-free condensed soup, as it may not produce the same creamy texture.

How to tell it’s done

The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The broccoli should be tender but still bright green, offering little resistance when pierced with a knife.

The sauce should be bubbling gently and have thickened slightly. If the sauce seems too thin, let it cook uncovered for an additional 15–20 minutes to reduce. The cheese should be fully melted and incorporated into the sauce, with no visible streaks of raw soup or cheese.

  • Poultry: 165°F (74°C) in the thickest part
