Tips for success
For perfectly round cookies, gently nudge them into a circle with a spatula as soon as they come out of the oven.
This is especially effective if they have spread slightly. Also, using a cookie scoop ensures even sizes, which promotes uniform baking.
To keep the cookies soft for longer, store them in an airtight container with a slice of white bread. The bread absorbs excess air and releases moisture, keeping the cookies tender. Replace the bread every couple of days if needed.
Variations
- Citrus Sugar Cookies: Add 1 tablespoon of orange or lemon zest to the wet ingredients along with the vanilla. The citrus brightens the flavor and adds a lovely aroma. You can also roll the dough balls in colored sugar mixed with zest for extra texture.
- Chocolate Chip Sugar Cookies: Fold in 1/2 cup of mini chocolate chips along with the sprinkles, or replace the sprinkles entirely. The chocolate pairs beautifully with the buttery vanilla dough. Use dark or milk chocolate chips based on preference.
- Almond Extract Variation: Replace the vanilla bean paste with 1 teaspoon of almond extract. Almond adds a nutty, cherry-like flavor that complements the butter. If you have allergies, skip this variation or use a nut-free extract.
- Red Velvet Sugar Cookies: Add 1 tablespoon of unsweetened cocoa powder and 1 teaspoon of red food coloring to the wet ingredients. Increase the flour by 1 tablespoon to balance the cocoa. The result is a festive red-tinted cookie with a hint of chocolate.
Storage and make-ahead
- Fridge
- For longer freshness, store the baked cookies in an airtight container in the refrigerator for up to 1 week. Let them come to room temperature before serving.

- Reheat
- To reheat, place the cookies on a baking sheet and warm in a 300°F (150°C) oven for 5-7 minutes, or microwave for 10-15 seconds until soft and warm.
Store the baked cookies in an airtight container at room temperature for up to 5 days. To keep them soft, add a slice of bread to the container.
They also freeze beautifully; place them in a single layer in a freezer-safe bag or container for up to 3 months.
The cookie dough can be made ahead and chilled for up to 48 hours before baking. You can also scoop and roll the dough balls, then freeze them on a baking sheet until solid.
Transfer to a freezer bag and bake directly from frozen, adding 1-2 minutes to the baking time.

Valentine's Bakery Sugar Cookies: Soft, Chewy & Buttery

Ingredients
- 3/4 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp vanilla bean paste
- 2 cups all-purpose flour
- 2 tbsp cornstarch
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup pink and red sprinkles
- 1/4 cup granulated sugar, for rolling
Instructions
- In a large glass bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Whisk in the egg, egg yolk, and vanilla bean paste. Continue whisking for about 2 minutes until the mixture is pale and smooth.
- Sift the all-purpose flour, cornstarch, baking soda, and salt into the wet mixture. Fold gently with a rubber spatula until just combined. Be careful not to overmix, as that can make the cookies tough.
- Gently fold the pink and red sprinkles into the dough with a spatula. Stir just until they are evenly distributed, taking care not to overmix.
- Scoop the dough into 12 equal balls, about 2 tablespoons each. Roll each ball in the granulated sugar until fully coated. Place them on a parchment-lined baking sheet.
- Refrigerate the cookie dough balls for at least 30 minutes. Chilling solidifies the butter, which helps the cookies spread less and stay thick and soft.
- Preheat the oven to 350°F (175°C). Bake the chilled cookies for 13 minutes, until the edges are set but the centers still look slightly soft. The cookies will continue to set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. The centers will firm up as they cool, leaving a soft and chewy texture.
