Tips for success
For the best zebra pattern, use a standard ice cream scoop to portion the batter into the pan. Drop each scoop in the center, alternating between vanilla and chocolate.
The weight of the batter will naturally spread, creating concentric rings. If you prefer a more rustic look, spoon the batter in random dollops and swirl gently.
To ensure even baking, place the loaf pan on a baking sheet lined with parchment. This catches any overflow and makes the pan easier to handle. Let the cake cool completely before slicing, as it will be more tender and less likely to crumble. Use a serrated knife and cut with a gentle sawing motion for clean, even slices.
Variations
- Citrus Zebra Loaf: Add the zest of one orange or lemon to the sugar when whisking with eggs. Replace the vanilla with orange blossom water or keep vanilla and add a tablespoon of orange juice for a bright, fragrant twist.
- Mocha Swirl: Dissolve 1 teaspoon of instant espresso powder in the milk before adding. This enhances the chocolate flavor and adds a subtle coffee note that pairs beautifully with hazelnuts.
- Nut-Free Marble Cake: Omit the hazelnuts entirely or replace with an equal amount of toasted sesame seeds or shredded coconut for a crunchy topping without nuts. The cake is still delicious and kid-friendly.
- Gluten-Free Version: Substitute the all-purpose flour with a 1:1 gluten-free baking flour blend that contains xanthan gum. The batter may be slightly thicker; add an extra tablespoon of milk if needed. Bake as directed, checking for doneness a few minutes later.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving.
- Freezer
- Wrap tightly in plastic wrap and foil; freeze for up to 3 months. Thaw overnight in the refrigerator.
- Reheat
- Warm slices in a 300°F oven for 5-7 minutes, or microwave for 15 seconds.
Store the cake in an airtight container at room temperature for up to 4 days. To keep it extra moist, wrap the cut end with plastic wrap. If the weather is humid, you can store it in the refrigerator, but bring to room temperature before serving.
The cake also freezes well; wrap the whole loaf or individual slices tightly in plastic wrap and then foil, and freeze for up to 3 months.
You can prepare the batter up to a day ahead and keep it in the refrigerator, but note that the baking powder will lose some strength, so the cake may not rise as tall.
For best results, bake the cake fully, cool it, and wrap tightly. The baked loaf can be stored at room temperature for a day or frozen for up to 3 months. Thaw overnight in the refrigerator and warm slices gently before serving.
Serving ideas
Serve this zebra marble loaf cake slightly warm or at room temperature. It's wonderful on its own, but a dollop of whipped cream or a scoop of vanilla ice cream takes it over the top.
For brunch, pair it with fresh berries and a cup of coffee. The crunchy hazelnut topping adds a lovely contrast, so no extra sauce is needed.
This loaf also makes a beautiful gift. Wrap it in parchment and tie with twine for a homemade present. Slice it thick for dessert or thin for tea. The striking zebra pattern makes it a conversation piece on any table. Store leftovers well, and it's just as delicious the next day, if it lasts that long.

Ultra-Soft Zebra Marble Hazelnut Loaf Cake

Ingredients
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup whole milk
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- 1/2 cup chopped roasted hazelnuts
Instructions
- In a large bowl, whisk the eggs and sugar together until pale and frothy, about 2 minutes. Add the oil, milk, and vanilla, and whisk until combined.
- Add the flour and baking powder to the wet mixture. Whisk until just combined and smooth, being careful not to overmix. The batter should be glossy and thick.
- Pour half of the plain batter into a separate bowl. Whisk the cocoa powder into that portion until fully blended. Now you have one vanilla and one chocolate batter.
- Spoon alternating dollops of vanilla and chocolate batter into the prepared loaf pan, creating a checkerboard pattern. Then swirl gently with a knife or skewer to form zebra stripes.
- Sprinkle the chopped roasted hazelnuts evenly over the top of the batter, covering the surface completely.
- Bake at 340°F (170°C) for 40 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown and cracked down the middle.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. For clean slices, use a serrated knife and a gentle sawing motion.
