Tips for success
For an extra-crispy crust, use panko breadcrumbs or a mix of panko and regular breadcrumbs. You can also toast the breadcrumbs lightly in a dry skillet before using them to enhance their crunch.
If you prefer a deeper color, brush the rolls with a little melted butter or extra egg wash before baking.
To make the rolls ahead, assemble and bread them, then refrigerate on the baking sheet for up to 4 hours before baking. You may need to add a couple of minutes to the baking time if they are cold.
These börek are best served fresh from the oven, but leftovers can be reheated in a toaster oven or air fryer to restore crispness.
Variations
- Spicy Kick: Add a few slices of fresh chili or a pinch of red pepper flakes to the filling for a spicy twist. You can also brush the baked rolls with a little hot honey or sriracha for a sweet-heat glaze.
- Vegetarian Version: Omit the pastırma and use extra kaşar cheese, sautéed mushrooms, or spinach. Add a sprinkle of smoked paprika to the breadcrumbs for extra flavor.
- Herb-Infused Crust: Mix dried oregano, thyme, or za'atar into the breadcrumbs before coating the rolls. This adds an aromatic note that complements the cheese and pastırma.
- Cheese Swap: Replace kaşar cheese with a blend of mozzarella and feta for a different flavor profile. The feta adds tanginess, while mozzarella provides a stretchy melt.
Storage and make-ahead
- Fridge
- Store leftover börek in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven for 5-7 minutes to regain crispness.
- Freezer
- Freeze unbaked breaded börek on a baking sheet until solid, then transfer to a freezer bag for up to 2 months. Bake from frozen at 400°F for 25-30 minutes.
- Reheat
- Reheat baked börek in a 375°F oven for 5-7 minutes, or in an air fryer at 350°F for 3-4 minutes, until hot and crisp.
Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 375°F (190°C) oven for 5-7 minutes, or until heated through and crisp. Avoid microwaving, as it will make the crust soggy.
You can assemble the börek up to a day in advance. Prepare the rolls completely, but do not bake. Cover the baking sheet with plastic wrap and refrigerate.
When ready to bake, remove from the fridge, let sit at room temperature for 10 minutes, then bake as directed, adding 2-3 minutes to the baking time.
Serving ideas
Serve the börek hot, either whole or sliced in half on the diagonal to showcase the melted cheese and pastırma. They are wonderful as an appetizer with a side of pickled peppers or a simple yogurt dip. For a more substantial meal, pair them with a fresh green salad or a bowl of tomato soup.
These rolls are also great for parties—arrange them on a platter with toothpicks for easy grabbing. They pair nicely with a cold beer or a glass of ayran, the traditional Turkish yogurt drink.
If you have leftovers, they make a satisfying snack the next day, though they are best enjoyed fresh.

Ultra-Crispy Breaded Paçanga Börek

Ingredients
- 4 sheets fresh yufka pastry (about 12x12 inches each)
- 8 slices Turkish pastırma
- 1/2 cup diced green pepper
- 1/2 cup shredded kaşar cheese
- 2 large eggs, beaten
- 1/4 tsp salt
- 1 1/2 cups crunchy breadcrumbs (galeta unu)
- 2 tbsp vegetable oil
Instructions
- Lay one sheet of yufka on a clean work surface with a corner pointing toward you. Place 2 slices of pastırma, a sprinkle of diced green pepper, and about 2 tablespoons of shredded kaşar cheese in a line near the wide base of the triangle. Fold the two outer edges inward over the filling, then roll the yufka tightly from the base to the tip into a thick, uniform cigar shape. Dab the tip with a little water and press to seal. Repeat with the remaining sheets and filling.
- In a shallow bowl, beat the eggs with the salt until well combined and slightly frothy. Set the bowl next to a plate of breadcrumbs for the breading station.
- One at a time, dip each rolled börek into the beaten egg mixture, turning to coat completely. Let any excess drip off, then roll in the breadcrumbs, pressing gently so the crumbs adhere evenly. Place the breaded rolls on a plate while breading the rest.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the breaded börek on the prepared sheet, leaving space between them. Drizzle the vegetable oil evenly over the tops, using a brush to spread it if needed.
- Bake the börek for 20 minutes, or until the crust is deeply golden and crisp. If the rolls are browning unevenly, rotate the baking sheet halfway through. The filling should be hot and the cheese melted.
- Remove the baking sheet from the oven and let the börek rest for 2 minutes. Serve hot, whole or sliced in half to show the melted cheese and pastırma.
