Before you start

Before starting, gather all ingredients and equipment. Thaw the yufka pastry if frozen, and keep it covered with a damp cloth to prevent drying. Dice the green pepper and shred the kaşar cheese if not pre-shredded.

Set up a breading station with a shallow bowl of beaten eggs and a plate of breadcrumbs. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Have a small bowl of water ready for sealing the rolls.

Ingredients at a glance (8)
  • 4 sheets fresh yufka pastry (about 12x12 inches each)
  • 8 slices Turkish pastırma
  • 1/2 cup diced green pepper
  • 1/2 cup shredded kaşar cheese
  • 2 large eggs, beaten
  • 1/4 tsp salt
  • 1 1/2 cups crunchy breadcrumbs (galeta unu)
  • 2 tbsp vegetable oil

Instructions

Roll and Fill

  1. Prepare the Filling and Roll the Börek
Lay one sheet of yufka on a clean work surface with a corner pointing toward you. Place 2 slices of pastırma, a sprinkle of diced green pepper, and about 2 tablespoons of shredded kaşar cheese in a line near the wide base of the triangle. Fold the two outer edges inward over the filling, then roll the yufka tightly from the base to the tip into a thick, uniform cigar shape. Dab the tip with a little water and press to seal. Repeat with the remaining sheets and filling.
Look for The rolls are tight and even, with no gaps and the seam securely sealed.
Tip Keep the yufka covered with a damp cloth while working to prevent it from drying out.
  2. Whisk the Egg Wash
In a shallow bowl, beat the eggs with the salt until well combined and slightly frothy. Set the bowl next to a plate of breadcrumbs for the breading station.
Look for The egg wash is uniform and light yellow.
Tip Whisking thoroughly ensures the salt is fully dissolved.

At the end of this phase, you have four neatly rolled cigar-shaped börek, each with the filling enclosed and the edges sealed.

The yufka should be pliable and not cracked. The rolls are uniform in thickness, about 1 inch in diameter, and the filling is visible at the ends but not spilling out.

Bread and Arrange

  1. Bread the Rolls
One at a time, dip each rolled börek into the beaten egg mixture, turning to coat completely. Let any excess drip off, then roll in the breadcrumbs, pressing gently so the crumbs adhere evenly. Place the breaded rolls on a plate while breading the rest.
Look for Each roll is evenly coated with breadcrumbs, with no bare spots.
Tip Press the breadcrumbs lightly but firmly for a thick, crunchy crust.
  2. Arrange and Oil the Börek
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the breaded börek on the prepared sheet, leaving space between them. Drizzle the vegetable oil evenly over the tops, using a brush to spread it if needed.
Look for The rolls are lightly coated with oil, which will help them brown and crisp.
Tip Spreading the oil with a brush ensures even coverage without making them greasy.

The rolls are now coated in a thick, even layer of breadcrumbs, with no bare spots. They sit on a parchment-lined baking sheet, lightly drizzled with oil. The crumbs look dry and ready to bake, and the rolls are spaced at least 1 inch apart.

Bake and Finish

  1. Bake Until Golden and Crisp
Bake the börek for 20 minutes, or until the crust is deeply golden and crisp. If the rolls are browning unevenly, rotate the baking sheet halfway through. The filling should be hot and the cheese melted.
Look for The crust is deeply golden and sounds crackly when tapped.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Bake on the middle rack for even heat distribution.
  2. Rest and Serve
Remove the baking sheet from the oven and let the börek rest for 2 minutes. Serve hot, whole or sliced in half to show the melted cheese and pastırma.
Look for The filling is molten and the crust remains crisp.
Tip A short rest prevents the filling from running out when cutting.

After baking, the börek are deeply golden with a crunchy, crackly crust. When tapped, they sound hollow. A gentle squeeze reveals a soft interior, and the aroma of toasted breadcrumbs and melted cheese fills the kitchen. Let them rest for a minute before serving to set the filling.

Common mistakes

One common mistake is overfilling the rolls, which can cause them to burst open during baking. Keep the filling to about 2 tablespoons per roll and spread it evenly. Another issue is not sealing the yufka properly—dab the tip with water and press firmly to ensure the roll stays closed.

Also, avoid skipping the egg wash; it's essential for the breadcrumbs to stick and for achieving that crispy crust. Finally, don't overcrowd the baking sheet; leave space between rolls so they crisp evenly.

How to tell it’s done

The börek is done when the crust is deeply golden brown and crisp to the touch. To ensure the eggs are fully cooked, the internal temperature of the rolls should reach at least 160°F (71°C).

The cheese should be fully melted and hot, and the pastırma should be heated through. If the rolls are browning too quickly, cover loosely with foil and continue baking until the center is hot.
