Tips for success
For the best texture, use a digital scale to measure the flour and water. The dough should be slightly tacky but not sticky. If it's too dry, add a teaspoon of water at a time; if too wet, add a little flour.
Knead until the dough passes the windowpane test – when stretched, it should form a thin, translucent membrane without tearing.
To get a perfectly runny yolk, remove the pide from the oven when the white is just set and the yolk still wobbles. The residual heat will continue to cook it slightly as it rests.
If you prefer a firmer yolk, leave it in the oven for an extra 30 seconds, but be careful not to overcook it, as the yolk will become chalky.
Variations
- Lamb Pide: Substitute lamb cubes for the beef, and add a pinch of ground cumin and coriander to the filling for a more aromatic flavor. Cook to the same internal temperature of 145°F.
- Spicy Sucuk Pide: Replace half of the beef with sliced sucuk (Turkish sausage) and reduce the pul biber to 1/2 tsp. The sucuk adds a smoky, spicy note that pairs well with the cheese.
- Vegetarian Pide: Omit the meat and increase the vegetables to 2 diced tomatoes and 3 green peppers. Add 1/2 cup of sautéed mushrooms for extra umami. The cooking time remains the same, but check for doneness at 8 minutes.
- Cheese Lover's Pide: Add 1/2 cup of crumbled feta cheese to the filling along with the kaşar. The feta adds a salty, tangy contrast to the rich beef and egg.

Leftover pide can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place in a 350°F (175°C) oven for 5-7 minutes, or until warmed through. The crust will soften slightly, but the flavors will still be delicious.
The dough can be made a day ahead and stored in the refrigerator after the first rise. Let it come to room temperature for about 30 minutes before shaping. The filling can also be prepared a few hours in advance and kept refrigerated. Assemble and bake just before serving.
Serving ideas
Serve the pide hot from the oven, cut into slices, with a side of fresh salad or yogurt. The runny yolk acts as a sauce, so no additional condiments are needed.
It's a complete meal on its own, but a simple green salad with lemon and olive oil would be a refreshing contrast.
For a more substantial spread, offer extra pul biber or chili flakes for those who like heat. A bowl of thick yogurt on the side is a classic accompaniment, providing a cool, tangy balance to the rich, savory pide.
This dish is best enjoyed immediately, while the crust is still crisp and the yolk is warm and runny.

Turkish Pide with Beef, Kaşar & Egg Yolk

Ingredients
- 300 g bread flour
- 1 tsp instant yeast
- 1 tsp salt
- 1 cup warm water
- 300 g tender beef or lamb cubes, cut into small dice
- 1 diced tomato
- 2 green peppers, chopped
- 1 tsp pul biber (Aleppo pepper)
- 200 g kaşar cheese, grated
- 1 egg yolk
- 2 tbsp cold butter, for rubbing
Instructions
- In a large bowl, combine the bread flour, instant yeast, and salt. Add the warm water and stir until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rest for 1 hour until doubled.
- While the dough rests, toss the diced beef or lamb with the diced tomato, chopped green peppers, and pul biber. Set aside in the refrigerator until ready to use.
- Preheat the oven to 480°F (250°C) with a baking stone or heavy baking sheet inside. Divide the dough into two equal pieces. On a floured surface, roll each piece into a long oval about 1/4-inch thick. Spread half the filling down the center of each oval, leaving a border. Sprinkle with half the grated kaşar cheese. Fold the long edges inward over the filling, pinching the ends to form a boat shape.
- Carefully transfer the pide to the hot baking stone. Bake for 9 minutes, then remove from the oven and gently press the center to create a well. Drop an egg yolk into each well. Return to the oven and bake for 1 more minute, until the yolk is just set but still runny. Let it rest for 3 minutes before slicing.
- Remove the pide from the oven and immediately rub the hot crust with cold butter. Let rest for 3 minutes before slicing. This allows the meat to rest and the yolk to settle.
- Using a rocker knife or sharp chef's knife, slice the pide crosswise into portions. Tear off a piece of crust and dip it into the molten yolk and cheese before eating.
