Tips for success
For the most tender meatballs, handle the mixture as little as possible. Roll them gently and do not pack the meat tightly. If the mixture feels too wet, add a tablespoon more breadcrumbs; if it feels too dry, add a teaspoon of water or olive oil.
Chilling the formed meatballs for 15 minutes before baking helps them hold their shape. You can also make the meatballs a day ahead and keep them covered in the refrigerator until ready to bake.
To deepen the flavor of the vegetables, toss the eggplant and peppers with a little olive oil and salt before arranging them in the dish. This helps them caramelize and brown in the oven.
If you like a bit of heat, add a pinch of red pepper flakes to the sauce or the meatball mixture. The casserole is forgiving, so you can adjust the amount of garlic and cumin to your taste. Always let the dish rest for a few minutes after baking to let the sauce settle.
Variations
- Lamb and Mint: Replace half of the minced beef with ground lamb and add 1 tablespoon of chopped fresh mint to the meatball mixture. The lamb adds a rich, gamey flavor that pairs beautifully with the cumin and garlic.
- Spicy Turkish: Add 1 teaspoon of red pepper flakes or a finely chopped fresh chili to the meatball mixture and a pinch of cayenne to the tomato gravy. This variation brings a pleasant heat that complements the sweet peppers.
- Zucchini and Summer Squash: Swap the eggplant for an equal amount of zucchini and yellow squash, cut into cubes. This makes the casserole lighter and quicker-cooking, perfect for summer. Reduce the baking time by 5 minutes.
- Vegetarian Version: Omit the meatballs and increase the vegetables to include mushrooms, carrots, and potatoes. Use a lentil-based meatball substitute or simply bake the vegetables in the tomato sauce with chickpeas for added protein.
Storage and make-ahead
- Fridge
- Store leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until hot, about 15 minutes.
- Freezer
- Freeze the baked casserole in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat thawed casserole in a 350°F (175°C) oven for 20-25 minutes, or microwave individual portions for 2-3 minutes until piping hot.
Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop, making it even more delicious the next day. Reheat gently in the oven or microwave until piping hot. The vegetables will soften further, but the dish will still be satisfying.
The meatballs can be mixed and rolled up to a day in advance; keep them covered in the refrigerator. The vegetables can also be cut and refrigerated in a sealed container for several hours.
Assemble the casserole completely, but do not bake it, and keep it covered in the refrigerator for up to 24 hours. When ready to bake, add about 10 minutes to the cooking time since the dish starts cold.
Serving ideas
Serve the casserole hot from the oven, spooned into shallow bowls with plenty of the rich tomato sauce. Warm crusty bread is essential for dipping and sopping up the gravy. A simple green salad with lemon and olive oil makes a bright side dish that balances the richness of the casserole. You can also serve it with rice or bulgur pilaf if you prefer a more substantial meal.
For a family-style dinner, place the baking dish in the center of the table and let everyone help themselves. Garnish with extra chopped parsley and a sprinkle of black pepper.
A dollop of plain yogurt on the side adds a cool, creamy contrast to the spiced meatballs and is a common Turkish accompaniment. This casserole is hearty enough to be a main course on its own, but it also pairs well with grilled vegetables or a simple tomato salad.

Turkish Meatball and Roasted Vegetable Casserole

Ingredients
- 400 g minced beef
- 1 medium onion, grated
- 1/2 cup breadcrumbs
- 1 large egg
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp black pepper
- 1 tsp salt
- 1 large eggplant, cut into cubes
- 2 sweet peppers, sliced
- 2 cups rich garlic tomato gravy
- fresh parsley, chopped, for serving
- warm crusty bread, for dipping, to taste
Instructions
- In a large bowl, combine the minced beef, grated onion, breadcrumbs, egg, minced garlic, ground cumin, black pepper, and salt. Use your hands or a wooden spoon to mix until the ingredients are evenly distributed but do not overwork the mixture. Roll the mixture into bite-sized spherical meatballs, about 1 inch in diameter. Set them aside on a plate.
- Cut the eggplant into 1-inch cubes and slice the sweet peppers into strips. If the eggplant is very large, you can salt the cubes and let them sit for 10 minutes, then pat dry to remove excess moisture. Arrange the eggplant cubes and pepper slices evenly in the bottom of a baking dish or güveç.
- Place the meatballs on top of the vegetable layer in the baking dish, spacing them evenly. Pour the rich garlic tomato gravy over the meatballs and vegetables, making sure the sauce spreads evenly and coats the ingredients. Use a spoon to gently nudge the meatballs so they are partially submerged in the sauce.
- Preheat the oven to 390°F (200°C). Place the baking dish in the oven and bake for 25 minutes, until the vegetables are meltingly soft and the sauce is rich and thick. The meatballs should be cooked through and register at least 160°F (71°C) on an instant-read thermometer inserted into the center of a meatball.
- Remove the casserole from the oven and let it rest for 5 minutes. The sauce will thicken slightly as it rests. Sprinkle the chopped fresh parsley over the top just before serving. Serve hot with warm crusty bread for dipping into the rich sauce.
