Tips for success
For the best flavor, use a heavy-bottomed skillet for searing, such as cast iron or stainless steel. This ensures even browning and prevents sticking.
If the meatballs stick to the pan, they may not be browned enough; wait until they release naturally before turning. The grated onion adds moisture, so the meatballs should be juicy, not dry.
When baking, choose a dish that holds the ingredients snugly but not too deep. A 9x13-inch baking dish works well. If the sauce reduces too much, add a splash of water or broth.
Let the casserole rest for a few minutes before serving to allow the sauce to set. Serve with warm crusty bread to soak up every bit of the sauce.
Variations
- Lamb and mint: Replace the ground beef with ground lamb and add 2 tablespoons of chopped fresh mint to the meatball mixture. The mint pairs beautifully with the cumin and garlic. Use the same cooking times and temperatures.
- Spicy version: Add 1 teaspoon of red pepper flakes or a finely chopped fresh chili to the meatball mixture. Use hot peppers in place of some of the sweet peppers for extra heat. Adjust the amount to suit your taste.
- Vegetarian: Omit the meatballs and increase the vegetables to 2 eggplants and 3 peppers. Add a can of chickpeas for protein. Sear the chickpeas with the vegetables and bake as directed. The cooking time remains the same.
- Cheese-topped: After baking, sprinkle 1/2 cup of crumbled feta or shredded mozzarella over the top and return to the oven for 5 minutes until melted. The cheese adds a creamy, salty contrast to the rich sauce.
Storage and make-ahead

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight.
Reheat gently in the oven or microwave until warmed through. The sauce may thicken upon standing; add a splash of water or broth when reheating if needed.
The meatballs can be prepared and seared up to 1 day ahead. Store them in the refrigerator. The vegetables can also be pre-cooked and stored separately.
Assemble the casserole just before baking, adding a few extra minutes to the baking time if the ingredients are cold from the refrigerator.
Serving ideas
Serve the casserole hot from the oven, spooned into shallow bowls. Accompany with warm crusty bread, such as a rustic sourdough or baguette, for dipping into the rich sauce. A simple green salad with a lemon vinaigrette would make a fresh counterpoint.
For a heartier meal, serve over rice, bulgur, or orzo. The sauce coats the grains beautifully. Garnish with additional fresh parsley or a dollop of yogurt, if desired. This casserole is also delicious with a side of roasted potatoes or a simple cucumber salad.

Turkish Meatball and Roasted Eggplant Casserole

Ingredients
- 1 lb ground beef
- 1/2 cup grated onion
- 1/2 cup breadcrumbs
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
- 1 large eggplant, cut into chunks
- 2 red and green sweet peppers, sliced
- 1 1/2 cups tomato reduction
- 1/4 cup fresh parsley, chopped
Instructions
- In a large bowl, combine the ground beef, grated onion, breadcrumbs, half of the minced garlic, cumin, black pepper, and salt. Knead with your hands until the mixture is well combined and slightly sticky, about 1 to 2 minutes. Roll the mixture into small meatballs, about 1 inch in diameter. Set aside on a plate.
- Heat the olive oil in a large skillet over medium-high heat. Add the meatballs in a single layer and sear until browned on all sides, about 5 to 7 minutes total. Use a slotted spoon to transfer the meatballs to a plate. They do not need to be cooked through at this point.
- In the same skillet, add the eggplant chunks and sliced peppers. Cook over medium-high heat, stirring occasionally, until the eggplant is golden and the peppers are blistered, about 8 to 10 minutes. Add the remaining garlic and cook for 1 minute more. The vegetables should be tender but not mushy.
- Preheat the oven to 390°F (200°C). Spread the cooked vegetables in an even layer in a baking dish. Arrange the seared meatballs on top. Pour the tomato reduction over everything, making sure to coat the meatballs and vegetables evenly.
- Bake the casserole in the preheated oven for 25 minutes, until the sauce is bubbling and the meatballs are cooked through. The internal temperature of the meatballs should reach 160°F (71°C). If desired, broil for the last 2 minutes to caramelize the top.
- Sprinkle the chopped parsley over the hot casserole. Serve directly from the baking dish with warm crusty bread for dipping into the rich sauce.
