This is the dinner that turns a simple baguette into a centerpiece: a whole garlic loaf hollowed out and stuffed with tender chicken simmered in a spiced butter sauce, then buried under a blanket of mozzarella and baked until the whole thing is golden, crisp, and impossibly cheesy.
Each slice delivers a hit of garlicky bread, juicy spiced chicken, and a dramatic cheese pull that makes it hard to stop at one piece.
Butter chicken meets garlic bread in this over-the-top stuffed baguette. The chicken is seared in butter with a warm blend of coriander, cumin, garam masala, turmeric, and chili powder, then spooned into a hollowed garlic baguette with plenty of shredded mozzarella.
Baking at 400°F (200°C) for 12 minutes melts the cheese into every crevice while the bread turns crisp and golden. The result is a pull-apart loaf that is equal parts juicy, spicy, and indulgent. Serve it hot, straight from the baking sheet, and watch it disappear.
Ingredients
- 1 large garlic baguette (about 12 inches)
- 1 lb boneless skinless chicken breast, cut into bite-size pieces
- 3 tbsp butter
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- 1/2 tsp ground turmeric
- 1/2 tsp chili powder
- 1 tbsp ginger garlic paste
- 2 cups shredded mozzarella cheese
Why this recipe works
Hollowing out the baguette creates a sturdy shell that holds the buttery chicken and melted cheese without turning soggy. The removed crumb leaves room for the filling, and the bread itself becomes a crisp, garlicky vessel that contrasts with the soft, saucy chicken.
Baking the assembled loaf at high heat quickly melts the cheese and crisps the exterior, so the bread stays firm and the filling stays moist.
Searing the chicken first develops deep flavor and ensures it is fully cooked before it goes into the bread. Blooming the spices in the hot butter releases their essential oils, making the sauce more aromatic and complex. The mozzarella, melted over the top and between the layers, acts as a glue that holds everything together and delivers that iconic cheese pull with every slice.
Notes and substitutions
Use a good-quality garlic baguette from the bakery section; it should be sturdy enough to hold the filling. If the baguette is very soft, toast it lightly before hollowing.
Chicken breast is the leanest choice, but thighs work just as well and add a bit more richness. Shredded mozzarella is the classic choice for maximum stretch, but a mix of mozzarella and provolone adds a sharper flavor.
The spice blend is flexible: adjust the chili powder to taste, or add a pinch of cayenne for more heat. If you do not have ginger garlic paste, mash together equal parts grated ginger and garlic. The recipe works with a plain baguette too, but the garlic butter in the bread is a big part of the flavor. For a milder version, reduce the chili powder and garam masala slightly.
- chicken breast: chicken thighs, cut into bite-size pieces; cook until 165°F (74°C) in the center.
- garlic baguette: plain baguette brushed with garlic butter before filling.
- mozzarella: provolone or a mix of provolone and mozzarella for a sharper flavor.
