Tips for success
For the best texture, make sure the dough is well-kneaded and properly proofed. A warm, draft-free spot helps the dough rise faster.
If you're short on time, you can use a bread machine for the dough, but hand-kneading gives you more control. When shaping, keep the dough covered with a damp towel to prevent a skin from forming.
The filling can be made a day ahead and refrigerated; just bring it to room temperature before using. If you prefer a spicier kick, add a pinch of red pepper flakes or a chopped chili.
For a vegetarian version, substitute the beef with cooked lentils or mushrooms. These buns are best enjoyed warm, but they also reheat well in a toaster oven.
Variations
- Spicy Lamb: Swap ground beef for ground lamb and add 1/2 teaspoon of red pepper flakes for a fiery kick. Use feta cheese instead of mozzarella for a tangy, traditional Turkish flavor.
- Vegetarian: Replace the meat with cooked lentils or chickpeas, and add extra vegetables like zucchini or mushrooms. Use a dairy-free cheese alternative to make it vegan.
- Cheese Only: Omit the meat entirely and fill the buns with a mixture of mozzarella, feta, and fresh herbs like parsley and dill. This makes a quick and cheesy snack.
- Chicken: Use ground chicken or turkey instead of beef. Add a little more oil to the filling to keep it moist, and season with sumac or oregano for a different flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat in the oven to restore crispness.
- Freezer

- Reheat
- Reheat in a 350°F (175°C) oven for 5–10 minutes until hot and the crust is crisp.
Store leftover buns in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 4 days.
Reheat in a 350°F (175°C) oven for 5–10 minutes until warm and crispy. The filling may soften the bread over time, so it's best to reheat in the oven rather than the microwave.
The dough can be prepared and proofed overnight in the refrigerator. The next day, let it come to room temperature for 30 minutes before shaping. The filling can also be made ahead and refrigerated for up to 2 days. Assembled buns can be frozen unbaked; bake from frozen, adding 5–10 minutes to the baking time.
Serving ideas
Serve these buns warm, straight from the oven, when the cheese is melted and the filling is juicy. They are delicious on their own or with a side of yogurt or a fresh salad.
The buns are satisfying enough for a main course, but also great as an appetizer or party finger food. Cut them in half to show off the beautiful filling.
Pair with a simple tomato and cucumber salad dressed with olive oil and lemon. A bowl of Turkish lentil soup or a dollop of garlic yogurt complements the spiced beef perfectly. For drinks, a glass of ayran (yogurt drink) or a light red wine works well. These buns are versatile and sure to please a crowd.

Turkish Karnıyarık Poğaça Buns: Juicy Stuffed Bread

Ingredients
- 1 cup warm milk
- 1 cup warm water
- 1/2 cup vegetable oil
- 1 egg white
- 1 tbsp active dry yeast
- 1 tbsp granulated sugar
- 1 1/2 tsp salt
- 5 cups all-purpose flour
- 1 lb ground beef
- 2 tomatoes, diced
- 1 sweet pepper, diced
- 1 1/2 cups shredded mozzarella cheese
- 1 tsp Turkish spice blend (or paprika, cumin, black pepper)
- 1 egg yolk, beaten
Instructions
- In a large bowl, combine warm milk, warm water, oil, egg white, yeast, sugar, and salt. Stir gently and let sit for 5 minutes until frothy. Add flour gradually, stirring until a soft dough forms. Turn out onto a floured surface and knead for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise until doubled, about 1 hour.
- While the dough rises, cook the ground beef in a skillet over medium heat until browned, breaking it up with a spoon. Drain excess fat. Add diced tomatoes, sweet pepper, and Turkish spice blend. Cook for 5 minutes until vegetables soften. Remove from heat and let cool slightly. Stir in shredded mozzarella cheese.
- Punch down the risen dough and divide into 8 equal pieces. Roll each piece into a ball, then flatten into a disc about 1/4-inch thick. Place a generous spoonful of filling in the center of each disc. Fold the dough over the filling and pinch the edges to seal, forming a boat shape. Place seam-side down on a parchment-lined baking sheet.
- Using a sharp knife, score a slit along the top of each bun, about 1/2-inch deep, to resemble a canoe. Brush the tops with beaten egg yolk for a golden shine.
- Preheat the oven to 350°F (175°C). Bake the buns for 25 minutes, or until golden brown and puffed. The internal temperature of the filling should reach 160°F (71°C). Let cool on the baking sheet for 5 minutes before serving.
