Tips for success
For the best texture, use day-old pide bread that is slightly stale—it toasts better and stays crunchier. If using fresh bread, cut it into larger cubes and toast a little longer. When warming the döner meat, use a very hot skillet and avoid overcrowding; work in batches if necessary to get those crispy edges.
The garlic yogurt can be made ahead and kept in the fridge. For a more intense garlic flavor, let the minced garlic sit in the yogurt for 15 minutes before serving.
The tomato sauce can also be prepared in advance and reheated. When pouring the foaming butter, do it right before serving so it sizzles dramatically and stays hot.
Variations
- Chicken İskender: Use thinly sliced chicken breast or thigh meat instead of lamb or beef. Cook in a hot skillet until golden and cooked through to 165°F (74°C). The rest of the recipe stays the same.
- Vegetarian Version: Replace the meat with grilled eggplant slices or a plant-based kebab alternative. Sauté in the skillet until heated through and slightly charred. The sauce and butter remain the same.
- Spicy Kick: Add a teaspoon of red pepper flakes or a pinch of cayenne to the tomato sauce for heat. Serve with extra chili flakes on the side for those who want more.
- Herb-Infused Butter: Add a sprig of fresh thyme or a bay leaf to the butter as it foams, then remove before pouring. This adds an aromatic note that complements the meat.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the yogurt separate and add fresh when serving.
- Freezer
- Freeze the cooked meat and sauce in a freezer-safe container for up to 1 month. Thaw overnight in the refrigerator and reheat in a skillet.
- Reheat
- Reheat the meat and sauce in a skillet over medium heat until hot, adding a splash of broth if needed.
Leftover İskender kebab can be stored in an airtight container in the refrigerator for up to 2 days. The bread may lose its crunch, but the flavors will meld.
Reheat gently in a skillet or microwave, and consider adding a little extra broth or butter to refresh the sauce. The yogurt should be stored separately and added fresh when serving.
The components can be prepped ahead: toast the pide cubes, make the tomato sauce, and prepare the garlic yogurt. Store them separately in the refrigerator for up to 2 days.
When ready to serve, reheat the sauce and toast the pide cubes in a skillet to crisp them again. Cook the meat fresh for the best texture, then assemble and pour the foaming butter right before serving.
Serving ideas
Serve the İskender kebab family-style on a large platter, with the garlic yogurt on the side so everyone can take as much as they like.
The blistered peppers and grilled tomatoes add a smoky, charred flavor that complements the rich meat and butter. Provide extra warm pide or crusty bread to soak up any remaining sauce.
For a complete meal, pair with a simple green salad with lemon and olive oil, or a bowl of lentil soup. A cold glass of ayran (yogurt drink) or a robust red wine like a Turkish Boğazkere works beautifully. The dish is best enjoyed immediately while the bread is still crisp and the butter is sizzling.

Turkish İskender Kebab with Pide, Foaming Butter & Garlic Yogurt

Ingredients
- 400 g thinly shaved döner lamb or beef
- 2 crusty Turkish pide flatbreads, cubed
- 3 tbsp butter
- 2 tbsp tomato paste
- 1 cup hot broth
- 1 cup thick garlic yogurt
- blistered green peppers, for serving
- grilled tomatoes, for serving
Instructions
- Cube the crusty Turkish pide bread into bite-sized squares. Heat a large skillet over medium heat and add 1 tablespoon of the butter. Once melted, add the pide cubes and toast, stirring frequently, until they are golden and crunchy on the outside, about 5 minutes. Transfer to a plate and set aside.
- In a saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add the tomato paste and cook, stirring, for 1 minute until it darkens slightly. Pour in the hot broth and whisk until smooth. Bring to a simmer and cook until the sauce is thick, glossy, and fragrant, about 5 minutes. Keep warm.
- Spread the toasted pide cubes evenly on a serving platter. Ladle the warm tomato sauce over the bread, making sure to cover all the cubes so they soak up the flavor.
- Heat a large skillet or griddle over high heat. Add the shaved döner meat in a single layer and cook, turning occasionally, until it is heated through and has crispy edges, about 3-4 minutes. If using raw meat, cook until it reaches an internal temperature of 145°F (63°C). Let it rest for 3 minutes before slicing.
- Pile the hot shaved döner meat evenly over the sauce-soaked pide cubes, covering the surface completely.
- Spoon the thick garlic yogurt onto one side of the platter, creating a cool contrast to the hot meat and bread.
- In a hot dry skillet or directly over a flame, blister the green peppers until charred in spots. Grill the tomatoes until softened and lightly charred. Arrange them around the platter.
- In a small saucepan, melt the remaining butter (about 2 tablespoons) over high heat until it foams and turns golden brown. Immediately pour the sizzling, foaming butter over the entire platter, especially over the meat and bread, and serve at once.
