Before you start
Take the pizza dough out of the refrigerator at least 30 minutes before you start so it rolls easily. Preheat the oven to 400°F (200°C). Have all your toppings ready: thin-sliced sucuk, shredded mozzarella, and the egg yolk beaten.
You’ll also need a small bowl to invert in the center of the dough, a rolling pin, pastry brush, and a baking sheet lined with parchment paper.
Ingredients at a glance (7)
- 1 lb store-bought pizza dough, at room temperature
- 1/2 cup tomato sauce
- 1 tsp dried oregano
- 6 oz sucuk (Turkish spicy sausage), thinly sliced
- 2 cups shredded mozzarella cheese
- 1 egg yolk, beaten
- 2 tbsp toasted sesame seeds
Instructions
Assemble the Ring
- Roll and shape the dough ringPlace the pizza dough on a large sheet of parchment paper. Roll it into a large circle, about 14 inches in diameter. Center an inverted bowl (about 6 inches wide) on the dough. Use a sharp knife to cut the dough around the bowl, leaving a ring shape. Remove the bowl and the center dough piece, reserving the center for another use if desired. Transfer the parchment with the dough ring to a baking sheet.Look for The dough ring is even and about 3 inches wide all around.Tip If the dough springs back, let it rest for 5 minutes before rolling again.
- Spread the herbed tomato sauceIn a small bowl, stir the tomato sauce with the dried oregano. Using a ladle or spoon, spread the herbed tomato sauce evenly around the dough ring, leaving a 1-inch border on the outer edge and a 1/2-inch border on the inner edge.Look for The sauce forms a neat, even ring, not touching the edges.Tip Avoid over-saucing; a thin layer prevents a soggy crust.
- Layer on the sucuk and mozzarellaArrange the sucuk slices over the sauce in a single layer, slightly overlapping. Sprinkle the shredded mozzarella evenly over the sucuk, covering the sauce completely.Look for The ring is evenly filled with sucuk and cheese, no gaps.Tip Use a light hand with the cheese so it melts without spilling over.
At this point, you have a neat dough ring on parchment, topped with a thin layer of herbed tomato sauce, sucuk slices, and a blanket of mozzarella.
The edges are clean, and the toppings are evenly distributed. It smells like a pizzeria. Before baking, make sure the dough hasn’t torn and the sauce isn’t pooling.
Bake to Golden
- Brush with egg wash and sprinkle sesameIn a small bowl, beat the egg yolk. Using a pastry brush, brush the exposed dough on the outer and inner edges with the egg yolk. Sprinkle the toasted sesame seeds generously over the egg-washed dough.Look for The dough glistens with egg wash and is dotted with sesame seeds.Tip Brush gently to avoid tearing the dough; sesame seeds stick best to a moist surface.
- Bake the crown pizzaPreheat the oven to 400°F (200°C). Bake the pizza ring for 20–25 minutes, until the crust is puffed and golden brown and the cheese is bubbling. The internal temperature of the sucuk should reach 160°F (71°C) to ensure it is fully heated.Look for The crust is deep golden, the cheese is bubbly and slightly browned in spots.Safe temperature 160°F (71°C) internal temperature (ground meat)Tip Rotate the baking sheet halfway through for even browning.
The oven is doing its magic: the dough puffs up into a golden crown, the cheese melts into a bubbly, slightly blistered layer, and the sesame seeds toast to a nutty aroma. The kitchen smells warm and savory. Check that the crust is uniformly golden and the cheese is fully melted with no raw dough visible.
Slice and Serve
- Cool slightly and sliceRemove the pizza from the oven and let it cool on the baking sheet for 5 minutes. Using a pizza cutter or roller cutter, slice the crown into wedges or segments. Lift a slice with a spatula or your hands, letting the mozzarella stretch.Look for The cheese stretches in long strings as you lift a slice.Tip Use a sharp roller cutter for clean cuts; wipe the blade between cuts.
After a brief rest, you slice the crown into wedges. The mozzarella stretches in long, gooey strings as you lift a slice. The crust is crisp on the outside, soft inside, and the sucuk adds a spicy kick. Serve warm, with extra sauce or a sprinkle of oregano if desired.
Common mistakes
A common mistake is overloading the dough with sauce or cheese, which can make the center soggy and cause the ring to lose its shape. Keep the sauce thin and the cheese moderate.
Another issue is rolling the dough too thin; if it’s too thin, it may tear or bake too hard. Aim for a 1/4-inch thickness. Also, don’t skip the egg wash — it gives the crust its glossy, golden sheen and helps the sesame seeds stick.
How to tell it’s done
The crown pizza is done when the crust is deep golden brown and puffed, and the cheese is bubbling and lightly browned in spots.
The sucuk should be heated through, with an internal temperature of at least 160°F (71°C) for safety. If the crust browns too quickly, tent loosely with foil and continue baking until the cheese is fully melted.
- Ground meat: 160°F (71°C) in the thickest part
