Tips for success
For the best crust, use a baking steel or preheat your baking sheet in the oven. The hot surface helps the bottom crisp up quickly. If you don't have a steel, a heavy baking sheet works too.
Let the dough rise in a warm, draft-free spot, such as an oven with the light on. This speeds up the rise and ensures a light texture.
When shaping the pide, use a light touch to avoid deflating the dough. If the dough springs back while rolling, let it rest for 5 minutes before continuing.
You can also use your hands to gently stretch the dough into an oval. For a more authentic look, you can use a fork to crimp the edges, but the classic boat shape is achieved by pinching the ends.
Variations
- Cheese and Herb: Replace the beef with a mixture of crumbled feta, shredded mozzarella, and chopped fresh parsley or dill. Add a pinch of red pepper flakes for heat. This vegetarian version is light and flavorful.
- Spicy Lamb: Use ground lamb instead of beef, and add 1 teaspoon of ground coriander and 1/2 teaspoon of cayenne pepper. Top with crumbled feta after baking for a tangy contrast.
- Chicken Pide: Use ground chicken or turkey, and season with garlic, oregano, and a squeeze of lemon. Add chopped spinach or bell peppers for extra vegetables.
- Mushroom and Caramelized Onion: Sauté sliced mushrooms and onions until deeply caramelized. Use as the filling, and top with a blend of mozzarella and Gruyère for a rich, umami flavor.

Store leftover pide in an airtight container in the refrigerator for up to 3 days. To reheat, place in a 350°F (175°C) oven for 5-7 minutes, or until heated through and the crust is crisp. Avoid microwaving, as it will make the crust soggy.
The dough can be made up to 2 days ahead and stored in the refrigerator. Let it come to room temperature before shaping. The beef filling can also be cooked ahead and refrigerated for up to 2 days.
Bring to room temperature before assembling. You can also assemble the pide completely and refrigerate for up to 4 hours before baking.
Serving ideas
Serve the pide warm, sliced into diagonal strips, as a main course with a fresh green salad or a bowl of yogurt.
For a traditional Turkish spread, offer it alongside meze like hummus, baba ganoush, and olives. The pide is also delicious with a squeeze of lemon and a sprinkle of sumac.
For a casual dinner, cut the pide into smaller pieces and serve as an appetizer or snack. It pairs well with a glass of ayran, a Turkish yogurt drink, or a light red wine. Leftover pide can be enjoyed cold or reheated, but it's best within a day or two.

Turkish Boat Pide with Spiced Beef and Cheese

Ingredients
- 3 1/2 cups all-purpose flour
- 1 cup warm water
- 1/4 cup milk
- 1/4 cup olive oil
- 2 1/4 tsp active dry yeast
- 1 tsp sugar
- 1 1/2 tsp kosher salt
- 1 lb ground beef
- 1 onion, finely chopped
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1 1/2 cups shredded mozzarella cheese
- 1 egg yolk
- 2 tbsp butter, melted
Instructions
- In a large bowl, combine the warm water, milk, olive oil, sugar, and yeast. Let sit for 5 minutes until foamy. Add the flour and salt. Mix until a shaggy dough forms. Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- In a skillet over medium heat, cook the ground beef with the chopped onion, cumin, smoked paprika, salt, and pepper. Break up the meat with a spoon and cook until browned and cooked through, about 8 minutes. Drain any excess fat. Let the filling cool slightly.
- Preheat the oven to 400°F (200°C). Punch down the dough and divide it into two equal pieces. On a floured surface, roll each piece into a long oval, about 1/4-inch thick. Transfer to a parchment-lined baking sheet. Pinch the ends of each oval to form sharp, pointy canoe tips.
- Divide the beef mixture evenly between the two dough boats, spreading it in a line down the center. Top with the shredded mozzarella. In a small bowl, whisk the egg yolk with 1 tablespoon of water. Brush the exposed dough edges with the egg wash.
- Bake the pide for 15-18 minutes, until the crust is blistered and deep golden brown, and the cheese is bubbling. The internal temperature of the beef should reach 160°F (71°C).
- Remove the pide from the oven and immediately brush the hot crust with melted butter. Let rest for 5 minutes. Slice into diagonal strips and serve warm.
