Tips for success
For the most flavorful meatballs, let the seasoned meat mixture rest for 10 minutes before shaping. This allows the breadcrumbs to absorb the moisture and the spices to meld.
If the mixture feels too wet, add a tablespoon more breadcrumbs; if too dry, add a splash of water. Shaping the meatballs with lightly wet hands prevents sticking and results in smoother, rounder balls.
To achieve a deeper, more complex flavor, sauté the sliced onions and peppers in a little olive oil for 2-3 minutes before adding them to the baking dish. This extra step caramelizes their sugars and adds a subtle sweetness to the final dish. However, the recipe works beautifully as written, with the vegetables roasting directly in the oven.
Variations
- Spicy Lamb Version: Replace the ground beef with ground lamb for a richer, more robust flavor. Add an extra pinch of red pepper flakes and a teaspoon of ground coriander to the meatball mixture for a Middle Eastern twist. Lamb pairs beautifully with the sweet peppers and melted cheese.
- Vegetarian Option: Omit the meatballs and double the vegetables, adding mushrooms, zucchini, and eggplant. Increase the baking time slightly until the vegetables are very tender. The cheese and tomato sauce will still create a satisfying, hearty dish that works as a main course.
- Cheese Variations: Experiment with different melting cheeses: try a mix of mozzarella and cheddar for a sharper flavor, or use smoked provola for a smoky note. For a spicy kick, add a few slices of pepper jack cheese to the topping.
- Add Potatoes: For a more filling meal, add 2 medium potatoes, peeled and cut into 1-inch cubes, to the vegetable mixture. Toss them with the oil and spices before arranging in the dish. The potatoes absorb the sauce and become tender and flavorful.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until hot and bubbling.
- Freezer

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or in a 350°F oven until warmed through. The cheese may lose some of its stretchiness upon reheating, but the flavor remains delicious.
The meatballs can be prepared up to 24 hours in advance and kept covered in the refrigerator. The vegetables can also be sliced and tossed with the seasonings ahead of time.
Assemble the dish completely, cover with plastic wrap, and refrigerate for up to 12 hours before baking. Add the sauce just before baking; the baking time may need to be increased by 5-10 minutes if starting from cold.
Serving ideas
Serve this Turkish baked meatballs and vegetables dish hot, straight from the oven, with the cheese still bubbling. It’s wonderful with crusty bread to mop up the sauce, or over a bed of fluffy rice.
A simple green salad with a lemony vinaigrette adds a fresh contrast to the rich, savory flavors. For a more substantial meal, serve with bulgur pilaf or roasted potatoes.
For a festive presentation, garnish with a sprinkle of fresh parsley or a few chili flakes just before serving. The dish is meant to be enjoyed family-style, with everyone helping themselves from the center of the table.
Pair with a glass of Turkish red wine or a cold beer to complete the experience. Leftovers taste even better the next day, as the flavors continue to meld.

Turkish Baked Meatballs and Vegetables with Melted Cheese

Ingredients
- 1 1/4 lb ground beef
- 1 medium onion, grated
- 1 clove garlic, grated
- 4 tbsp breadcrumbs
- 1/2 small glass club soda
- 2 tbsp fresh parsley, finely chopped
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp red pepper flakes
- 1 tsp ground cumin
- 1 tsp salt
- 2 medium onions, julienned
- 3 green peppers, sliced
- 2 red kapya peppers, sliced
- 4 cloves garlic, sliced
- 3 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp chili flakes
- 1 tsp salt
- 1/2 tbsp tomato paste
- 1/2 tbsp pepper paste
- 1 1/2 cups hot water
- 1 pinch salt
- 1 1/2 cups grated kaşar cheese
Instructions
- In a large glass bowl, combine the ground beef, grated onion, grated garlic, breadcrumbs, club soda, chopped parsley, black pepper, paprika, red pepper flakes, cumin, and salt. Knead with your hands until the mixture is well combined and slightly sticky. Shape the mixture into walnut-sized round meatballs, about 1 1/2 inches in diameter. Set them aside on a plate.
- In a rectangular glass Borcam dish, combine the julienned onions, sliced green peppers, sliced red kapya peppers, and sliced garlic. Drizzle with olive oil and sprinkle with thyme, chili flakes, and salt. Toss everything together with your hands to coat the vegetables evenly.
- Place the prepared meatballs neatly on top of the seasoned vegetables in the Borcam dish, spacing them evenly so they are nestled among the vegetables. Press them slightly into the vegetable mixture so they sit securely.
- In a measuring jug, whisk together the tomato paste, pepper paste, hot water, and a pinch of salt until the pastes are fully dissolved. The sauce should be a smooth, deep red liquid.
- Pour the prepared sauce evenly over the meatballs and vegetables, making sure to cover the entire surface. The liquid should come about halfway up the sides of the dish, coating the meatballs and vegetables.
- Cover the Borcam dish with wet parchment paper, tucking the edges under the rim. Place in the oven preheated to 350°F (180°C) and bake for 30 minutes, until the vegetables are tender and the meatballs are cooked through.
- Remove the dish from the oven and discard the parchment paper. Sprinkle the grated kaşar cheese evenly over the top. Return to the oven and bake for an additional 5 minutes, until the cheese is melted and golden brown.
- Remove the dish from the oven and let it rest for 5 minutes. Serve sizzling hot directly from the Borcam dish, lifting out meatballs and vegetables with a spatula, ensuring each serving gets plenty of the melted cheese and sauce.
