Before you start
Before starting, gather all ingredients and a 6-quart slow cooker. Whisk the cake mix, eggs, oil, and water in a large bowl until smooth. Lightly grease the slow cooker insert.
Measure the chocolate disks, chunks, and chips, and have the pudding mix ready. The prep takes about 15 minutes. No need to preheat the oven or any special equipment—just a bowl and a whisk.
Ingredients at a glance (10)

- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 cup bittersweet chocolate disks
- 1 cup milk chocolate chunks
- 1 cup white chocolate chips
- 1 box instant hot chocolate pudding mix (3.9 oz)
- raspberry sorbet, for serving
- chocolate curls, for serving
Instructions
Prepare the Batter and Layers
- Prepare the BatterIn a large mixing bowl, whisk together the dark chocolate fudge cake mix, eggs, vegetable oil, and water until smooth and no dry streaks remain. The batter will be thick and glossy. Lightly grease the inside of a 6-quart slow cooker with nonstick spray or a little oil.Look for The batter is thick, shiny, and pourable.Tip Whisk by hand for about 2 minutes to ensure the eggs are fully incorporated.
- Layer the ChocolatePour the fudge batter into the prepared slow cooker and spread it into an even layer. Sprinkle the bittersweet chocolate disks evenly over the batter, followed by the milk chocolate chunks and white chocolate chips. Gently press the chocolate pieces into the batter with a spatula so they are partially submerged.Look for The top is scattered with three distinct types of chocolate.Tip Pressing the chocolate into the batter helps it sink and create pockets of molten lava.
- Add the Pudding MixSprinkle the instant hot chocolate pudding mix evenly over the entire surface of the batter and chocolate. Do not stir. The pudding mix will form a crackly top as the cake bakes.Look for A thin, even layer of pudding mix covers the cake.Tip Do not stir after adding the pudding mix; it needs to stay on top for the crackly dome.
At the end of this phase, the slow cooker contains a smooth, thick fudge batter topped with an even layer of bittersweet disks, milk chocolate chunks, and white chocolate chips.
The pudding mix forms a thin, uniform dusting over the top. The batter is glossy and the chocolate pieces are partially pressed in. Everything is ready for the slow cooker.
Slow-Cook Until Set
- Slow-Cook the CakeCover the slow cooker with the lid and cook on HIGH for 2.5 hours. Do not open the lid during the first 2 hours. The edges will set, the center will remain slightly soft, and a crackly brownie-like dome will form on top.Look for The top is crackled and the edges look set, but the center still jiggles slightly.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip Cooking times vary; start checking at 2 hours 15 minutes. The center should be set but soft.
- Check for DonenessThe cake is done when a toothpick inserted into the center comes out with moist crumbs but no raw batter. The internal temperature of the cake should reach 160°F (71°C) to ensure the eggs are fully cooked. If the center is still very wet, cook for 10 to 15 minutes more.Look for A toothpick comes out with moist crumbs and the center is firm to the touch.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip Use an instant-read thermometer for accuracy; insert it into the thickest part of the cake.
- Let the Cake RestTurn off the slow cooker and let the cake rest, uncovered, for 10 minutes. This allows the chocolate lava to settle slightly and makes serving easier. The cake will continue to set as it cools.Look for The cake pulls slightly away from the sides and the top is set.Tip Resting helps the cake hold its shape when scooped.
After 2.5 hours, the top has formed a crackly, brownie-like dome that is dry to the touch. The edges are set and pull slightly away from the sides. The center is soft but not liquid, and a toothpick inserted comes out with moist crumbs. The kitchen smells intensely of chocolate. The internal temperature reads 160°F. The cake rests for 10 minutes.
Scoop and Serve
- Scoop and ServeUsing a large spoon or ice cream scoop, scoop deep into the center of the cake to reach the molten chocolate core. Place each serving in a bowl, top with a scoop of raspberry sorbet, and sprinkle with chocolate curls. Serve warm.Look for Molten chocolate flows from the center as you scoop.Tip Scoop gently to keep the dome intact for each serving.
When you scoop into the center, molten chocolate flows out slowly, revealing a gooey, glossy lava. The cake holds its shape on the spoon. Each bowl gets a generous scoop of cake, a scoop of raspberry sorbet, and a shower of chocolate curls. The contrast of warm cake and cold sorbet is immediate and satisfying.
Common mistakes
One common mistake is lifting the lid during the first 2 hours, which lets out heat and steam and can prevent the cake from rising properly. Another is overmixing the batter—just whisk until smooth.
Adding the pudding mix and then stirring it in will ruin the crackly top. Also, using a slow cooker that is too small can cause the batter to overflow. Finally, don't undercook the cake—ensure the center reaches 160°F to be safe.
How to tell it’s done
The cake is done when the top is crackly and the edges are set, but the center still looks slightly soft. A toothpick inserted into the center should come out with moist crumbs, not raw batter.
The internal temperature should reach 160°F (71°C) to ensure the eggs are fully cooked. If the center is too wet, cook for 10 to 15 minutes longer. The cake will continue to set as it rests.
- Egg dishes: 160°F (71°C) in the thickest part
