Tips for success
For the best texture, serve the pretzel bites immediately after baking. The cheese is most molten and the crust is at its crispest right out of the oven. If you need to hold them, keep them warm in a low oven (200°F) for up to 20 minutes, but they are best fresh.
When shaping the bites, keep the dough pieces covered with a damp cloth to prevent them from drying out. If the dough becomes sticky, lightly flour your work surface.
For an extra shiny crust, brush the boiled bites with an egg wash (1 egg beaten with 1 tablespoon water) before sprinkling with salt—this is optional but gives a professional finish.
Variations
- Spicy Jalapeño: Add finely chopped pickled jalapeños to the cheese cubes before wrapping. The heat pairs well with the salty pretzel and creamy beer cheese. For extra spice, stir a few drops of hot sauce into the beer cheese dip.
- Everything Bagel: After boiling, sprinkle the bites with everything bagel seasoning instead of coarse salt. The combination of sesame, poppy, garlic, and onion adds a savory crunch that complements the cheese.
- Bacon Cheddar: Mix crumbled cooked bacon into the beer cheese dip and use sharp cheddar cubes in the filling. The smoky bacon flavor enhances the cheesy goodness and adds a meaty texture.
- Herb and Garlic: Brush the baked bites with melted butter mixed with minced garlic and chopped fresh parsley. This adds a fragrant, savory note that brightens the rich cheese and pretzel flavors.

Triple Cheese Stuffed Pretzel Bites with Beer Cheese

Ingredients
- 500 g pretzel dough
- 24 mozzarella & cheddar cubes
- 1/4 cup baking soda
- 4 cups boiling water
- 4 tbsp butter, melted
- coarse pretzel salt, for sprinkling, to taste
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 cup amber beer
- 1/2 cup milk
Instructions
- Cut the pretzel dough into 24 equal pieces. Flatten each piece into a small round. Place one mozzarella and cheddar cube in the center of each round. Wrap the dough tightly around the cheese, pinching the seams firmly to seal. Roll each into a smooth ball, making sure no cheese is exposed.
- Bring 4 cups of water to a rolling boil in a large pot. Carefully add the baking soda—it will bubble vigorously. Stir to dissolve. Working in batches, drop the stuffed dough balls into the boiling bath for 20 seconds each. Remove with a slotted spoon and transfer to a parchment-lined baking sheet.
- Preheat the oven to 425°F (220°C). Sprinkle the boiled pretzel bites generously with coarse pretzel salt. Bake for 12 minutes, or until the bites are deep mahogany brown and puffed. Remove from the oven and immediately brush the hot pretzel bites with melted butter.
- While the pretzel bites bake, melt 2 tablespoons of butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute until golden. Slowly whisk in the amber beer and milk. Continue whisking until the sauce thickens and bubbles, about 3 to 4 minutes. Season with a pinch of salt if desired.
- Transfer the warm beer cheese to a serving bowl. Serve the pretzel bites immediately alongside the dip. For the full experience, tear a bite open to reveal the molten cheese stretch and dunk it into the warm beer cheese.
