Before you start

Before starting, make sure the brisket is trimmed and at room temperature for about 30 minutes (but no longer, for food safety). Measure out the three seasoning packets and have the cowboy butter ready. If using homemade cowboy butter, prepare it ahead and keep it chilled.

For the serving noodles, cook the egg noodles according to package directions, drain, and toss with butter. Keep them warm while the brisket finishes. Have a large serving spoon and two forks ready for shredding.

Ingredients at a glance (6)
  • 3 1/2 lb beef brisket, trimmed
  • 1 oz dry ranch seasoning mix (1 packet)
  • 0.7 oz zesty Italian dressing mix (1 packet)
  • 0.87 oz brown gravy mix (1 packet)
  • 4 tbsp garlic-herb compound cowboy butter, cold
  • 12 oz buttered egg noodles, for serving

Instructions

Layer and Season

  1. Layer the Brisket
Place the trimmed beef brisket flat into the bottom of a 6-quart slow cooker. Sprinkle the dry ranch seasoning, zesty Italian dressing mix, and brown gravy mix evenly over the entire surface of the roast, turning to coat if needed.
Look for The brisket should be fully coated with the seasoning mixture.
Tip If the brisket is thicker on one end, place the thicker end toward the back of the slow cooker for even cooking.
  2. Add the Cowboy Butter
Place the four thick medallions of garlic-herb compound cowboy butter across the top of the seasoned brisket. No need to spread; the butter will melt and baste the meat as it cooks.
Look for The butter pats sit on top of the brisket, ready to melt.
Tip Cold butter works best; it melts slowly, allowing the herbs and garlic to infuse the meat.

At the end of this phase, the brisket is in the slow cooker, covered with the three seasoning mixes. The surface should look evenly coated with a dusty layer of herbs and spices. The cowboy butter pats sit on top, ready to melt. The raw meat should be at room temperature for no more than 30 minutes. The slow cooker is ready to turn on.

Slow Cook and Rest

  1. Slow Cook Until Fork-Tender
Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the brisket is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but for shredding, cook until the meat pulls apart easily. Let it rest for 3 minutes before slicing.
Look for The meat is tender and shreds with a fork; the gravy is bubbling and fragrant.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not open the lid during cooking; each peek releases heat and adds 20 minutes of cook time.
  2. Rest the Meat
Once the brisket is fork-tender, turn off the slow cooker. Let the brisket rest in the hot gravy for at least 10 minutes before shredding. This allows the juices to redistribute.
Look for The meat rests in the rich gravy, absorbing flavor.
Tip Resting is essential for moist, juicy shreds.

After 8 to 10 hours on low, the kitchen smells of garlic, herbs, and beef. The brisket is fork-tender, and the gravy is bubbling with a rich, glossy sheen.

The meat has pulled away from the fat cap and shreds easily. Let it rest for 10 minutes in the gravy before shredding. The internal temperature should be well above 145°F (63°C) for shredding.

Shred and Serve

  1. Shred and Serve
Using two forks, shred the brisket directly in the slow cooker, mixing it with the garlic-herb gravy. Serve over warm buttered egg noodles, spooning extra gravy over the top.
Look for The shredded beef is coated in glossy, herb-flecked gravy.
Tip For thicker gravy, remove the beef and simmer the sauce on the stovetop for a few minutes.

The shredded beef is coated in a silky, herb-flecked gravy. The egg noodles are warm and buttered, ready to receive the meat. Each serving is a generous mound of beef with a spoonful of gravy. The dish looks rustic and comforting, with the deep brown of the gravy contrasting with the pale noodles. Serve immediately.

Common mistakes

One common mistake is opening the slow cooker lid too often, which lets heat escape and extends cooking time. Another is using a lean cut like round roast, which can become dry. Stick with brisket or chuck.

Over-seasoning can happen if you add extra salt, since the packets are already salty. Finally, don't skip the resting step; it allows the juices to redistribute, keeping the meat moist. If the gravy seems thin, remove the meat and simmer the sauce on the stovetop to reduce.

How to tell it’s done

The brisket is done when it is fork-tender and easily shreds with minimal resistance. The internal temperature should reach at least 145°F (63°C) for food safety, but for shredding, it will likely be higher—around 190°F to 200°F (88°C to 93°C)—which is ideal for breaking down collagen.

The meat should look moist and glistening, and the gravy should be bubbling gently. If the meat is still tough, continue cooking for another 30 to 60 minutes and check again.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
