Tips for success

For even more flavor, sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker.

This adds a caramelized crust that deepens the savory notes. However, the recipe works perfectly without this step, so it is optional.

If you prefer a thicker gravy, after shredding the pork, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker.

Let it cook on high for 15-20 minutes until thickened. This is an easy way to adjust the consistency to your liking.

Variations

  • Spicy Kick: Add 1-2 teaspoons of chipotle chili powder or a diced jalapeño along with the seasonings. The heat will infuse the meat and gravy, giving it a smoky warmth.
  • Herb Infusion: Layer fresh rosemary sprigs and thyme under the roast before adding the seasonings. The herbs will perfume the meat as it cooks, adding an earthy note.
  • Beef Version: Substitute a 4-pound beef chuck roast for the pork. Increase the cook time to 8-10 hours on low. The beef will be equally tender and flavorful.
  • Mushroom Gravy: Sauté 8 ounces of sliced mushrooms in butter and add them to the slow cooker with the au jus. They will soften and enrich the gravy with umami.

Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.

Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed to loosen the gravy.

This dish is ideal for meal prep. Cook the pork a day ahead, shred it, and store it in the refrigerator. The fat will solidify on top; scrape it off before reheating.

The pork can also be frozen in portions for up to 3 months. Thaw overnight in the refrigerator before reheating.

Serving ideas

Serve the pork over steamed white rice, mashed potatoes, or egg noodles. The creamy gravy is also delicious over roasted vegetables or in soft tortillas for a pulled pork taco night. A side of pickles or a crisp green salad cuts through the richness.

For a low-carb option, serve the pork over cauliflower rice or alongside sautéed greens. The dish is hearty enough to stand alone, but a slice of crusty bread is perfect for sopping up the extra gravy. Garnish with fresh parsley or chives if desired.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, for a faster version, use the sauté function to brown the roast, then add the seasonings and liquids. Pressure cook on high for 90 minutes, then natural release for 15 minutes. Shred and serve as directed.
Why does the gravy sometimes look curdled?
Curdling can happen if the sour cream is added at the beginning and the cooker temperature is too high. To prevent this, use full-fat sour cream and cook on low. If curdling occurs, whisk the gravy vigorously to smooth it out.
Can the pork be cooked on high instead of low?
Yes, cooking on high for 5-6 hours will also work, but the meat may be slightly less tender. Low heat is recommended for the best texture and flavor.
What can be used instead of au jus?
Beef broth or chicken broth can be substituted. For a richer flavor, use a combination of broth and a teaspoon of soy sauce or Worcestershire sauce.
How can the dish be made gluten-free?
Check that the seasoning packets are gluten-free, as some contain wheat starch. Use a gluten-free brown gravy mix or make a slurry with cornstarch. Serve with rice or potatoes instead of wheat-based sides.

Three-Packet Dijon Cream Pork Shoulder: Slow-Cooker Comfort

Slow-cooked pork shoulder with creamy Dijon gravy in a black crockpot

Ingredients

  • 4 lb boneless pork shoulder roast
  • 1 oz dry ranch seasoning mix
  • 0.7 oz zesty Italian dressing mix
  • 1 oz brown gravy mix
  • 1/2 cup sour cream
  • 2 tbsp coarse whole-grain Dijon mustard
  • 1 cup beef au jus
  • Steamed white rice, for serving

Instructions

  1. Place the pork shoulder roast in the center of the slow cooker. There is no need to trim or sear it—the slow cooking will render the fat and make the meat tender.
  2. Sprinkle the dry ranch seasoning, Italian dressing mix, and brown gravy mix evenly over the entire surface of the pork. Use your hands or a spoon to rub the seasonings into the meat.
  3. Dollop the sour cream over the seasoned roast. Spread the Dijon mustard over the top as well. Pour the au jus along the side of the roast, not directly over the seasonings.
  4. Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 5 to 6 hours. The pork is done when it shreds easily with a fork and the internal temperature reaches at least 145°F (63°C). Let it rest for 3 minutes before slicing.
  5. Once the pork is fully cooked, transfer it to a cutting board. Use two forks to shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded pork to the slow cooker and stir it into the gravy.
  6. Spoon the shredded pork and creamy gravy over steamed white rice. Serve hot, with extra mustard on the side if desired.
Contains: milk, mustard
