Before you start

Before starting, pat the brisket dry with paper towels and trim any large pieces of hard fat. Have the three seasoning packets and the butter ready. No other prep is needed—no chopping, no marinating.

If you plan to serve over mashed potatoes, prepare them just before the brisket finishes, or keep them warm in a covered pot. The slow cooker does the rest, so you can walk away for hours.

Ingredients at a glance (5)
  • 3 1/2 lb beef brisket, trimmed
  • 1 oz dry ranch seasoning mix
  • 0.7 oz zesty Italian dressing mix
  • 1 oz brown gravy mix
  • 1/2 cup salted butter (1 stick)

Instructions

Layer and Season

  1. Layer the Brisket
Place the trimmed beef brisket flat in the bottom of a 6- to 7-quart slow cooker. It should sit in a single layer, touching the bottom as much as possible.
Look for The brisket should fit without folding over itself.
Tip If the brisket is too large, cut it into two or three pieces to fit.
  2. Sprinkle the Seasoning Packets
Evenly sprinkle the dry ranch seasoning mix, zesty Italian dressing mix, and brown gravy mix over the entire surface of the brisket. Use your hands or a spoon to coat the top and sides as much as possible.
Look for The brisket should be fully dusted with the seasoning blends.
Tip No need to rub in—the slow cooker will do the work.
  3. Add the Butter
Place the stick of salted butter directly on top of the seasoned brisket. It can sit whole or be cut into a few pats; either way works.
Look for The butter sits on the brisket, ready to melt and baste.
Tip Using salted butter adds extra flavor; if using unsalted, add a pinch of salt.

At the end of this phase, the brisket sits in the bottom of the slow cooker, dusted with the three seasoning packets and topped with a stick of butter. The raw meat is marbled and the seasonings form a colorful crust. The butter is cold and in place. Everything looks neat and ready to cook.

Slow Cook and Rest

  1. Cook Low and Slow
Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the brisket is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but for shredding it will be much higher. Let it rest for 3 minutes before slicing.
Look for The meat is falling apart when pierced with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not open the lid during cooking—each peek adds 20 minutes of cook time.
  2. Rest the Brisket
Turn off the slow cooker. Let the brisket rest in the hot liquid for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
Look for The liquid is bubbling gently; the meat is very tender.
Tip Resting also lets the gravy settle and thicken slightly.

After 8 to 10 hours, the kitchen smells deeply savory and buttery. The liquid is bubbling gently around the edges, and the brisket is visibly darker and shrunken.

A fork pierces it with no resistance. The meat rests in a rich, golden-brown gravy that has formed from the butter, seasonings, and beef juices.

Shred and Serve

  1. Shred the Beef
Using two forks, shred the brisket directly in the slow cooker, mixing it with the seasoned butter gravy. The meat should pull apart easily into long, juicy strands.
Look for The beef shreds with minimal resistance.
Tip Leave some larger chunks for texture if desired.
  2. Serve Over Mashed Potatoes
Spoon the shredded brisket and plenty of the buttery gravy over warm mashed potatoes or your favorite side. Serve immediately.
Look for The beef is glossy with gravy, steaming hot.
Tip The gravy is rich; a little goes a long way.

The shredded beef is glossy, moist, and piled high on a platter. The gravy is thick enough to coat a spoon but still pourable. When served over mashed potatoes, the beef and gravy soak into the potatoes, creating a comforting, hearty plate. The aroma is irresistible.

Common mistakes

The biggest mistake is lifting the lid too often. Every time you open the slow cooker, heat escapes and adds 20 to 30 minutes to the cooking time. Trust the process and keep the lid on.

Another error is using a lean cut like round or sirloin—they won't become tender. Stick with brisket or chuck roast. Finally, don't trim all the fat; a little fat is necessary for moisture and flavor.

How to tell it’s done

The brisket is done when it is fork-tender: a fork inserted into the thickest part should twist easily and the meat should begin to pull apart.

The internal temperature will likely be well above 145°F (63°C) after 8 to 10 hours on low, but for shredding it should be at least 195°F to 205°F (91°C to 96°C) for the collagen to fully break down. If it's not shredding easily, cook for another 30 minutes and check again.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
