Tips for success
For the best flavor, let the seasoned roast sit in the slow cooker for 15 minutes before turning it on, allowing the spices to penetrate the meat.
If you have time, sear the roast in a hot skillet for 2 minutes per side before adding it to the slow cooker — this adds a deep caramelized crust that elevates the dish even further.
The gravy is the star here, so don’t be shy with it. If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
For a thinner gravy, add a splash of beef broth or water when shredding.
Variations
- Spicy Kick: Add 1-2 teaspoons of crushed red pepper flakes or a diced jalapeño with the seasonings for a subtle heat that builds as it cooks.
- Mushroom Gravy: Sauté 8 oz sliced mushrooms in butter and add them with the gravy for an earthy, umami-rich twist.
- Herb Garden: Stir in 1 teaspoon dried thyme and 1 teaspoon dried rosemary with the seasoning packets for extra herbaceous depth.
- Balsamic Glaze: After shredding, drizzle the pork with 2 tablespoons balsamic glaze and toss to coat for a sweet-tangy finish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth or water to restore the gravy's consistency.
- Freezer
- Freeze in a freezer-safe container or bag for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little broth or water if the gravy has thickened too much.
Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a little broth if needed to loosen the gravy.
This dish is perfect for meal prep. Cook the pork as directed, shred it, and store it in the refrigerator for up to 4 days or freeze for up to 3 months.
To freeze, portion the pork into freezer-safe bags, removing as much air as possible. Thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the shredded pork on toasted brioche slider buns for a crowd-pleasing sandwich, or over mashed potatoes, egg noodles, or rice to soak up the gravy.
A side of roasted vegetables or a crisp green salad balances the richness. For a low-carb option, serve over cauliflower rice or alongside steamed broccoli.
This pork also makes a fantastic filling for tacos, burritos, or quesadillas. Pile it onto tortillas with your favorite toppings, or use it as a hearty topping for a baked potato. The possibilities are endless, and every version is just as satisfying.
