Tips for success
For the crispiest exterior, make sure the skillet is hot before pouring the batter. The oil should shimmer but not smoke. If the crepe browns too quickly, lower the heat slightly.
Using a non-stick skillet and a thin, flexible spatula makes flipping much easier. Let the crepe cook undisturbed for the full 3 minutes on the first side.
The batter can be made ahead and refrigerated overnight, but the sucuk and tomatoes may release some liquid. Stir the batter well before using.
If it seems too thin, add a tablespoon of flour; if too thick, add a splash of milk. Adjust the seasoning after cooking the first crepe, as the sucuk can be quite salty.
Variations
- Spicy pepper kick: Add 1/4 cup diced green bell pepper and a pinch of red pepper flakes to the batter. The peppers add crunch and a mild heat that complements the sucuk.
- Herb and feta: Swap the kaşar cheese for crumbled feta and increase the dill to 3 tablespoons. The feta adds a salty, tangy contrast to the rich batter.
- Vegetarian version: Omit the sucuk and add 1/2 cup sautéed mushrooms or zucchini. The vegetables add moisture and umami, making the crepes hearty without meat.
- Breakfast sandwich: Use the crepes as a base for a breakfast sandwich. Split one open and fill with a fried egg, extra cheese, and a few slices of tomato for a portable meal.
Storage and make-ahead
- Fridge
- Store cooled crepes in an airtight container with parchment between layers. Refrigerate for up to 3 days.
- Freezer
- Freeze cooked, cooled crepes in a single layer on a baking sheet, then transfer to a freezer-safe bag. Freeze for up to 2 months.
- Reheat
- Reheat thawed or refrigerated crepes in a dry skillet over medium heat for 2-3 minutes per side, or in a toaster oven at 350°F for 5-7 minutes.
Leftover crepes can be stored in an airtight container in the refrigerator for up to 3 days. Place a piece of parchment paper between each crepe to prevent sticking. Reheat in a dry skillet over medium heat for 2-3 minutes per side, or in a toaster oven until hot and the cheese is melted again.
The batter can be prepared up to 24 hours in advance and kept covered in the refrigerator. Stir gently before cooking. Cooked crepes can also be made ahead, cooled completely, and refrigerated in a sealed container.
Reheat as directed above. For longer storage, freeze the cooked crepes in a single layer, then transfer to a freezer bag.
Serving ideas
Serve the crepes warm, straight from the skillet, with a generous tear to show off the melted cheese.
They are excellent on their own, but a dollop of plain yogurt or a sprinkle of extra fresh dill brightens the dish. For a fuller breakfast, pair them with scrambled eggs, olives, and crusty bread.
These crepes are best enjoyed immediately, while the exterior is crisp and the cheese is gooey. If you are serving a crowd, keep the cooked crepes warm in a low oven (200°F) on a baking sheet while you cook the rest. They will stay tender and delicious for up to 20 minutes.

Thick Turkish Breakfast Crepes with Sucuk and Melted Cheese

Ingredients
- 2 large eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced sucuk sausage
- 1/2 cup diced tomatoes
- 3/4 cup shredded kaşar cheese
- 2 tbsp chopped fresh dill
- 1 tbsp olive oil, for the skillet
Instructions
- In a large mixing bowl, whisk the eggs and milk together until smooth. Add the flour, salt, and black pepper, and whisk until no lumps remain. The batter should be thick but pourable. Fold in the diced sucuk, diced tomatoes, shredded kaşar cheese, and chopped dill until evenly distributed.
- Place a non-stick skillet over medium heat and add the olive oil. Swirl to coat the bottom evenly. Let the oil heat until it shimmers but does not smoke.
- Pour a thick ladleful of the batter into the center of the skillet. Use the back of the ladle to spread it into an even round, about 1/2 inch thick. Cook for 3 minutes, undisturbed, until the bottom is deep golden brown and the edges look set.
- Slide a spatula under the crepe and flip it carefully. Cook for another 3 minutes, until the second side is golden brown and the center puffs up slightly. The cheese inside should be fully melted and the batter cooked through.
- Transfer the cooked crepe to a plate. Repeat with the remaining batter, adding a little more oil to the skillet if needed. Let the crepes rest for 1 minute before serving. Tear one open to show the melted cheese and enjoy warm.
