Tips for success

For the best texture, use a thick, hearty corn chip like Fritos. They hold up well to the chili gravy and beans without turning to mush. If you prefer a crunchier topping, add a handful of fresh chips just before serving. The contrast between the soft, baked chips and the crispy fresh ones is delightful.

Customize the heat level to your liking. For a spicier version, use hot chili gravy or add a diced jalapeño to the layers.

For a milder dish, use mild chili gravy and omit the jalapeños. The toppings also allow each person to adjust the heat individually—sliced jalapeños and hot sauce are perfect for that.

Variations

  • Spicy Chorizo Frito Pie: Replace half of the ground beef with fresh chorizo, removing it from the casings and browning it with the beef. The chorizo adds a spicy, smoky flavor. Use hot chili gravy and add an extra jalapeño to the layers. Finish with a drizzle of hot sauce.
  • Vegetarian Frito Pie: Omit the ground beef and use two additional cans of ranch-style beans or a plant-based ground meat substitute. Increase the chili gravy to 3 cups to keep the casserole moist. Cook on LOW for 2 1/2 hours, as there is no meat to tenderize. Top with vegan cheddar if desired.
  • Smoky Bacon Frito Pie: Cook 6 slices of bacon until crisp, then crumble. Layer the bacon with the beef and beans. Substitute the chili gravy with a smoky barbecue sauce mixed with beef broth. The bacon adds a salty, smoky depth that pairs perfectly with the cheddar.
  • Green Chile Frito Pie: Add a can of diced green chiles (4 oz) to the layers, spreading them over the beans. Use a green enchilada sauce instead of red chili gravy for a milder, tangier flavor. Top with extra green chiles and a sprinkle of cotija cheese before serving.

Store any leftover Frito Pie in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or in a skillet over medium heat until warmed through.

The chips will soften further upon storage, but the flavors will still be delicious. For best results, add fresh toppings after reheating.

This casserole can be assembled up to 24 hours in advance. Brown the beef, then layer all ingredients in the slow cooker insert and refrigerate.

When ready to cook, place the insert in the slow cooker and cook on LOW for 3 hours, adding 30 minutes to the cooking time if the mixture is cold. Alternatively, cook the casserole fully, then cool and refrigerate for up to 2 days before reheating.

Serving ideas

Serve the Frito Pie hot, straight from the slow cooker, with a ladle or large spoon. Offer a variety of toppings—diced avocado, sour cream, sliced jalapeños, fresh cilantro, and lime wedges—so everyone can customize their bowl. Pair with a cold beer or a tall glass of iced tea for a true Texas experience.

This dish is hearty enough to be a main course, but it also works well as a party appetizer. For a game-day spread, set up a Frito Pie bar with the casserole and an array of toppings.

Guests can build their own bowls. It's also delicious with a side of coleslaw or a simple green salad to cut through the richness.

Frequently asked questions

Can this Frito Pie be made ahead of time?
Yes, the casserole can be assembled up to 24 hours in advance. Layer the browned beef, beans, onion, corn chips, and chili gravy in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook on LOW for 3 hours, adding about 30 minutes to the cooking time if the ingredients are cold. The cheese can be added during the last hour of cooking.
Why are the corn chips soggy?
Corn chips will soften as they absorb the chili gravy and bean liquid, which is expected in a Frito Pie casserole. To keep some crunch, reserve a handful of corn chips and sprinkle them over the top just before serving. Also, avoid stirring the casserole after adding the gravy, as that can break down the chips further.
Can this recipe be made on the stovetop instead?
Yes, this can be made in a large Dutch oven or heavy pot. After browning the beef, layer the ingredients in the pot, cover, and simmer on low heat for about 1 hour, or until the cheese is melted and the mixture is bubbling. Stir occasionally to prevent sticking. The stovetop version will cook faster than the slow cooker.
What is red chili gravy?
Red chili gravy is a mildly spicy, tomato-based sauce seasoned with chili powder, cumin, and garlic. It's commonly used in Tex-Mex dishes like enchiladas and Frito Pie. You can use store-bought enchilada sauce or make your own by simmering tomato sauce with chili powder, cumin, and a bit of broth.
Can this be frozen?
Yes, this Frito Pie freezes well. Let it cool completely, then transfer to a freezer-safe container and freeze for up to 3 months. Thaw overnight in the refrigerator and reheat in the microwave or on the stovetop. The texture of the corn chips will soften further, but the flavor remains delicious. Add fresh toppings after reheating.

Slow-Cooker Texas Frito Pie Casserole with Beef and Beans

Ingredients

  • 2 lb ground chuck
  • 2 cans (15 oz each) ranch-style pinto beans, undrained
  • 2 cups red chili gravy
  • 1 medium white onion, diced
  • 4 cups corn chips (such as Fritos)
  • 3 cups sharp cheddar cheese, shredded
  • 1 medium avocado, diced
  • 1/2 cup sour cream
  • 1/2 cup sliced jalapeños
  • 1/4 cup fresh cilantro leaves
  • 1 medium lime, cut into wedges

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground chuck and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 8 to 10 minutes. Drain off any excess fat. Season with salt and pepper if desired, though the chili gravy and beans add plenty of flavor.
  2. In the slow cooker, spread half of the browned beef evenly over the bottom. Top with half of the ranch-style beans, half of the diced onion, and half of the corn chips. Repeat the layers with the remaining beef, beans, onion, and corn chips. Pour the red chili gravy over the top, spreading it to cover as much as possible.
  3. Sprinkle the shredded sharp cheddar cheese evenly over the top of the casserole. Cover the slow cooker with the lid and set it to LOW heat. Cook for 3 hours, or until the chili is bubbling through the layers and the cheese is melted and golden around the edges.
  4. After 3 hours, check that the casserole is hot and bubbling throughout. The beef should be fully cooked and tender, the beans soft, and the cheese completely melted into a gooey blanket. If the top needs more browning, cook for an additional 15 to 30 minutes on HIGH, watching closely.
  5. Spoon generous portions of the Frito Pie into bowls. Top each serving with diced avocado, a dollop of sour cream, sliced jalapeños, fresh cilantro leaves, and a squeeze of lime juice. Serve hot, with extra corn chips on the side for crunch.
