Before you start

Before beginning, ensure your slow cooker is clean and positioned on a level, heat-resistant surface. Take the beef chuck roast out of the refrigerator about 20 minutes before you start to take the chill off, which helps the meat cook more evenly.

Have your seasoning packet and apple butter ready to go. Slice your sweet onion into uniform half-moon slices to ensure they cook at the same rate. Having all your ingredients organized on the counter will make the assembly process quick and efficient.

Ingredients at a glance (4)
  • 3 lb beef chuck roast
  • 1 large sweet onion, thinly sliced
  • 1 packet pot roast seasoning
  • 1 cup spiced apple butter

Instructions

Assembly and layering

  1. Prepare the slow cooker base
Place the beef chuck roast into the bottom of the slow cooker. Scatter the thinly sliced sweet onions evenly over the top of the beef to ensure they soften and flavor the meat throughout the long cooking process.
Look for Ensure the beef is lying flat at the bottom of the slow cooker.
Tip Removing excess surface fat from the roast before placing it in the cooker helps achieve a cleaner final sauce.

At the end of this phase, the beef should be neatly placed at the bottom of the slow cooker, covered with a layer of onions, seasoning, and the apple butter mixture. Everything should be ready for the long, slow cooking process to begin.

Slow braising process

  1. Season and glaze the roast
Sprinkle the entire contents of the pot roast seasoning packet over the onions and beef. Pour the spiced apple butter mixture directly over the top, ensuring it covers the meat and onions to create a flavorful braising liquid.
Look for Ensure the seasoning is distributed evenly across the surface.
Tip Use a spatula to gently spread the apple butter if it is too thick to pour evenly.

During this phase, the slow cooker maintains a consistent, low temperature. You will notice the kitchen starting to smell fragrant with notes of beef, onion, and warm spices. The apple butter will liquefy and mix with the meat juices.

Finishing and shredding

  1. Slow cook and serve
Cover the slow cooker and cook on low heat for 8 hours. Once the cooking time concludes, check that the internal temperature of the beef has reached at least 145°F (63°C). Remove the beef to a cutting board, let it rest for at least 3 minutes, then shred it and serve with the warm juices.
Look for The meat should be fork-tender and falling apart easily.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce is too thin, you can reduce it in a small saucepan over medium heat for several minutes before serving.

The final stage results in a highly tender roast that is easy to shred. The sauce should be rich, glossy, and reduced slightly. The meat should be steaming and ready to be pulled apart with two forks before serving.

Common mistakes

A common mistake is cooking the roast on high heat for a shorter duration, which can lead to tougher meat instead of the desired tender, shredded texture. Always stick to the low setting for the full time required.

Another error is failing to let the meat rest after cooking; cutting into it immediately causes the juices to escape, resulting in drier meat.

Avoid lifting the lid of the slow cooker frequently during the cooking process, as this releases heat and moisture, significantly increasing the total cooking time.

How to tell it’s done

The roast is finished when the beef is fork-tender, meaning it yields easily to gentle pressure and can be shredded with little resistance. Use an instant-read thermometer to verify that the center of the roast has reached at least 145°F (63°C) for safety.

Once this temperature is reached, let the meat rest on a cutting board for at least 3 minutes before shredding. This rest period allows the juices to redistribute, ensuring that every bite of the shredded beef remains moist and flavorful.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
