Tips for success

For the best flavor, use a good-quality whole-grain Dijon mustard—the kind with visible seeds. It adds texture and a sharp, tangy kick that balances the richness of the sour cream. If you only have smooth Dijon, it will still work, but the sauce will be silkier and less rustic.

Don’t rush the cooking time. The long, slow cook is what makes the pork sirloin roast so tender.

If you’re short on time, you can cook on high for 4 to 5 hours, but the low-and-slow method yields a more evenly cooked, juicier result. Let the meat rest in the sauce for a few minutes before serving to allow the flavors to meld.

Variations

  • Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes along with the peppers for a spicy version. The heat will mellow as it cooks, leaving a subtle warmth.
  • Herb Infusion: Add 2 sprigs of fresh thyme or rosemary to the slow cooker along with the roast. Remove the herb sprigs before shredding for a subtle herbal note.
  • Mushroom Medley: Add 8 oz sliced cremini mushrooms to the slow cooker with the peppers and onions. They’ll absorb the sauce and add an earthy depth.
  • Smoky Twist: Replace the au jus with a smoky barbecue sauce and add 1 teaspoon smoked paprika. The result is a sweeter, smokier flavor profile that pairs well with coleslaw.

Storage and make-ahead

Fridge
Store in an airtight container for up to 4 days. Reheat gently with a splash of broth to restore the sauce's consistency.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat on the stovetop over medium-low heat, stirring occasionally, until hot. Add a little broth or water if the sauce has thickened too much.

Store any leftovers in an airtight container in the refrigerator for up to 4 days.

The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed. The flavors continue to develop, making the leftovers even more delicious.

This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook as directed. Or, cook the full recipe, shred the pork, and freeze in portion-sized containers for up to 3 months.

Serving ideas

Serve this pork over steamed white rice, mashed potatoes, or egg noodles to soak up the creamy sauce. A side of crusty bread is also excellent for dipping. For a low-carb option, serve it over cauliflower rice or alongside roasted vegetables.

Garnish with fresh parsley or chives for a pop of color, if you like. The dish is hearty on its own, but a simple green salad with a tangy vinaigrette would balance the richness nicely.

Leftovers make fantastic sandwiches or tacos—just pile the pork onto buns or tortillas and add a little extra sauce.

Frequently asked questions

Can this recipe be made with a different cut of pork?
Yes, pork shoulder or pork butt are excellent substitutes. They have more fat, which makes them even more tender and forgiving. You may need to increase the cooking time by 1-2 hours, as these cuts are larger and have more connective tissue.
Can the cooking time be shortened?
If you're short on time, you can cook on high for 4 to 5 hours instead of low for 8 to 10. The meat will still be tender, but the texture may be slightly less fork-tender. Always check that the internal temperature reaches at least 145°F (63°C) before serving.
Why does the sauce sometimes curdle?
Curdling can happen if the sour cream is added too early or if the heat is too high. To avoid this, use full-fat sour cream and cook on low. If the sauce does curdle, it's still safe to eat—just blend it until smooth or strain it.
Can this dish be made gluten-free?
Yes, the recipe is naturally gluten-free as long as the au jus you use is gluten-free. Check the label on the au jus or use a gluten-free beef broth. Serve it over rice or potatoes to keep the meal gluten-free.
How should leftovers be reheated?
Reheat leftovers on the stovetop over medium-low heat, stirring occasionally, until hot. Add a splash of broth or water if the sauce has thickened too much. You can also reheat in the microwave in 30-second intervals, stirring in between.

Sweet Pepper Dijon Cream Pork Sirloin Roast

Prep 15 minCook 8 hTotal 8 h 15 minServes 6
Shredded pork sirloin roast with bell peppers and onions in a creamy Dijon sauce, served in a slow cooker

Ingredients

  • 3 1/2 lb boneless pork sirloin roast
  • 2 bell peppers (red and green), sliced into thick strips
  • 1 sweet yellow onion, sliced
  • 1/2 cup sour cream
  • 1/4 cup coarse whole-grain Dijon mustard
  • 1 cup au jus

Instructions

  1. Place the pork sirloin roast in the center of the slow cooker insert. Scatter the sliced bell peppers and onion over and around the roast, tucking some underneath for even cooking.
  2. In a small bowl, stir together the sour cream and whole-grain Dijon mustard. Dollop the mixture over the top of the roast and vegetables, spreading it slightly with a spoon.
  3. Pour the au jus along the side of the slow cooker, being careful not to wash the mustard mixture off the top of the roast. The liquid should come about a quarter of the way up the roast.
  4. Cover the slow cooker and cook on low for 8 to 10 hours, until the pork is fork-tender and shreds easily. Avoid opening the lid during the first few hours to maintain heat. Let it rest for 3 minutes before slicing.
  5. Using two forks, shred the pork directly in the slow cooker, mixing it with the peppers and onions. The meat should pull apart with little resistance.
  6. Spoon the shredded pork, peppers, and creamy gravy over steamed rice or your favorite sides. Serve hot.
Contains: milk, mustard, celery
