Tips for success
For the most flavorful results, sear the chuck roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
If you're short on time, you can skip this step, but it's worth the extra few minutes. Also, try to use whole-grain Dijon mustard for a more rustic texture; the mustard seeds add a pleasant pop and a more complex flavor.
To make the sauce even richer, stir in a tablespoon of butter or a splash of heavy cream at the end of cooking.
If you prefer a thicker gravy, mix a tablespoon of cornstarch with an equal amount of cold water and stir it into the sauce, then let it cook for 10 minutes. For a touch of brightness, add a squeeze of lemon juice or a splash of white wine vinegar just before serving.
Variations
- Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes along with the peppers for a spicy version. You can also use a spicy brown mustard instead of Dijon for extra heat.
- Mushroom Medley: Add 8 oz of sliced mushrooms along with the peppers and onions. The mushrooms will soak up the sauce and add an earthy depth to the dish.
- Herb-Infused: Add 2 sprigs of fresh thyme or rosemary to the slow cooker along with the other ingredients. Remove the herb sprigs before shredding the beef for a subtle herbal note.
- Smoky Twist: Replace the au jus with beef broth and add 1 teaspoon of smoked paprika and 1/2 teaspoon of liquid smoke for a smoky barbecue flavor. Serve with coleslaw for a Southern-style meal.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- To freeze, place cooled leftovers in a freezer-safe container or bag and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a saucepan over low heat, stirring occasionally, until heated through.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the dish tastes even better the next day.
To reheat, gently warm in a saucepan over medium-low heat, adding a splash of beef broth or water if needed to loosen the sauce. You can also reheat individual portions in the microwave.
You can assemble the entire dish the night before by placing the seasoned roast, peppers, onions, and sauce in the slow cooker insert, then covering and refrigerating overnight. In the morning, simply place the insert in the slow cooker and cook as directed. This makes it perfect for busy mornings when you want to set dinner and forget it.
Serving ideas
Serve the shredded beef over steamed white rice, mashed potatoes, or egg noodles to soak up the luscious gravy. For a low-carb option, serve it over cauliflower rice or alongside roasted vegetables.
A side of crusty bread or dinner rolls is perfect for dipping into the sauce, and a simple green salad with a tangy vinaigrette balances the richness.
For a complete meal, pair this roast with a side of roasted asparagus or green beans. The creamy Dijon sauce also works beautifully as a topping for baked potatoes or polenta. If you have leftovers, use the beef in tacos, on sandwiches, or as a filling for stuffed peppers. Garnish with fresh parsley or chives for a pop of color and freshness.

Sweet Pepper Dijon Cream Chuck Roast: Easy Crockpot Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 2 bell peppers (red and green), sliced
- 1 large yellow onion, sliced
- 1/2 cup sour cream
- 3 tbsp whole-grain Dijon mustard
- 1 cup au jus
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Season both sides with kosher salt and black pepper. Scatter the sliced bell peppers and onion over and around the roast, covering it evenly.
- In a small bowl, stir together the sour cream, whole-grain Dijon mustard, and au jus until smooth. Pour the mixture over the roast and vegetables, making sure to coat the top of the roast.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the roast is fork-tender and easily shreds. The internal temperature of the beef should reach at least 145°F (63°C), but for fall-apart tenderness, it will be much higher. Let it rest for 3 minutes before slicing.
- Once the roast is tender, remove it to a cutting board and let it rest for at least 3 minutes. Then, using two forks, shred the beef into bite-sized pieces, discarding any large pieces of fat.
- Stir the shredded beef back into the sauce and vegetables in the slow cooker. Taste and adjust seasoning with salt and pepper if needed. Serve hot over steamed rice or with crusty bread, spooning extra sauce over the top.
