Tips for success
For the most flavorful results, choose a pork sirloin roast with good marbling. If the roast is thicker on one end, it may cook unevenly; consider cutting it into two smaller pieces to ensure even cooking.
The butter is non-negotiable—it adds richness and helps create the silky sauce that makes this dish irresistible.
To achieve perfect shredding, let the roast rest for at least 3 minutes after cooking. This allows the juices to redistribute, making the meat more tender and easier to pull apart.
When shredding, use two forks and pull in opposite directions for fine, even strands. Toss the shredded pork with the cooking juices to keep it moist and flavorful.
Variations
- Spicy Pepper Pork: Add 2 sliced jalapeños or a teaspoon of red pepper flakes along with the bell peppers for a spicy kick. Use pepper jack cheese as a topping if serving on sandwiches.
- BBQ Pork Sandwiches: After shredding, toss the pork with 1 cup of barbecue sauce and serve on buns with coleslaw. Omit the butter if you prefer a lighter sauce, or keep it for extra richness.
- Mexican-Style Pork: Replace the bell peppers with poblano peppers and add 1 teaspoon of ground cumin and 1 teaspoon of chili powder. Serve with warm tortillas, salsa, and lime wedges.
- Italian Herb Pork: Add 2 teaspoons of dried Italian seasoning and 1 teaspoon of garlic powder along with the vegetables. Serve over pasta or polenta with a sprinkle of Parmesan cheese.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a covered pot over low heat, stirring occasionally, until heated through. Add a little broth or water to loosen the sauce if needed.
Store leftover pork in an airtight container in the refrigerator for up to 4 days. The pork will keep well and can be reheated gently on the stovetop or in the microwave. The sauce may thicken when chilled; add a splash of broth or water when reheating to restore its consistency.
This dish is perfect for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cook time to account for the cold start. Alternatively, cook the pork fully, shred, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the shredded pork over creamy mashed potatoes or polenta, letting the buttery sauce soak into the base. It’s also fantastic piled onto toasted buns with a spoonful of the peppers and onions for a pulled pork sandwich. For a lighter option, serve over a bed of greens or alongside roasted vegetables.
The rich, savory sauce pairs well with crusty bread for dipping. For a complete meal, add a simple side salad or steamed green beans.
This dish is hearty enough to stand alone but versatile enough to complement a variety of sides. Garnish with fresh herbs like parsley or thyme if desired, though the flavors shine on their own.

Sweet Pepper Butter Pork Sirloin Roast

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 2 large bell peppers (red and green), sliced into strips
- 1 large yellow onion, sliced
- 1/2 cup salted butter (1 stick)
Instructions
- Place the pork sirloin roast in the center of the slow cooker. Scatter the sliced bell peppers and onion over and around the roast, tucking some underneath for even cooking.
- Place the stick of salted butter directly on top of the roast. It will melt during cooking, basting the meat and vegetables.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and shreds easily. Let it rest for 3 minutes before slicing.
- Remove the roast to a cutting board. Let rest for at least 3 minutes, then shred with two forks. Return the shredded pork to the slow cooker and toss with the peppers, onions, and juices.
- Spoon the shredded pork and peppers over mashed potatoes or onto buns. Drizzle with extra pan juices.
