Tips for success
For the best flavor, use a well-marbled chuck roast. The fat renders during cooking, keeping the meat moist and adding richness to the sauce. If you have time, let the roast sit at room temperature for 30 minutes before cooking—this helps it cook more evenly.
Don't skip seasoning; the salt and pepper are crucial for bringing out the flavors of the beef and vegetables. If you prefer a more pronounced pepper flavor, you can add a pinch of red pepper flakes, but the recipe as written is mild and family-friendly.
To make the sauce even more luxurious, you can whisk in a tablespoon of butter after shredding, off the heat. This adds a glossy finish and extra richness. If you have leftover jus, it's fantastic drizzled over roasted vegetables or used as a base for gravy.
The recipe is also versatile—try adding garlic, herbs like thyme or rosemary, or a splash of beef broth for extra depth. But the beauty of this dish is its simplicity, so feel free to adapt it to your taste.
Variations
- Spicy Kick: Add 2-3 sliced jalapeños or a teaspoon of crushed red pepper flakes along with the peppers for a spicy version. You can also use pepper jack cheese on top when serving.
- Herb-Infused: Tuck a few sprigs of fresh thyme or rosemary under the roast before cooking. The herbs infuse the meat and sauce with a subtle, earthy flavor. Remove the sprigs before serving.
- Beefy Mushroom: Add 8 oz. sliced cremini mushrooms along with the peppers and onions. The mushrooms add an earthy umami that complements the beef beautifully.
- Garlic Lover's: Add 6-8 whole garlic cloves, smashed, to the pot before cooking. The garlic softens and sweetens, infusing the sauce with a mellow, roasted garlic flavor.

Serving ideas
This dish is a star on its own, but it truly shines when served over a bed of creamy mashed potatoes. The buttery mashed potatoes soak up the golden jus, creating a perfect bite.
You can also serve it over rice, egg noodles, or polenta, or alongside crusty bread for dipping. For a lighter option, serve it over sautéed greens or zucchini noodles. The sweet peppers and onions add a touch of color and sweetness, making it a complete meal in one pot.
For a special dinner, pair this roast with a simple green salad and a glass of red wine, like a Zinfandel or Merlot. The dish is hearty and comforting, ideal for a Sunday supper or a cozy weeknight meal. Leftovers are fantastic in tacos, sandwiches, or on top of a baked potato. The possibilities are endless, and the flavors only get better with time. Serve it with a smile and watch it disappear.

Sweet Pepper Butter Chuck Roast: Easy Crockpot Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 3 bell peppers (mixed red and green), sliced into thick strips
- 2 sweet yellow onions, sliced
- 1 stick salted butter, cut into pieces
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the sliced bell peppers and onions evenly over and around the roast. Season the top of the roast with kosher salt and freshly ground black pepper.
- Place the stick of salted butter, cut into a few pieces, directly on top of the seasoned roast. It will melt as the cooker heats, basting the beef and vegetables.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and easily shreds. The peppers and onions will soften and release their juices, creating a rich, buttery sauce. Let it rest for 3 minutes before slicing.
- Once the roast is tender, transfer it to a cutting board and let it rest for at least 3 minutes. Using two forks, shred the beef into bite-sized pieces, discarding any large pieces of fat.
- Return the shredded beef to the slow cooker and stir it into the peppers, onions, and buttery pan juices. Let it sit on WARM for 10 minutes so the beef soaks up the sauce.
- Spoon the beef and pepper mixture over mashed potatoes or your favorite sides. Drizzle with extra pan jus and serve hot.
