Tips for success
For the best flavor, use a good-quality beef gravy. If making homemade, a roux-based gravy with beef broth works beautifully. The butter adds a final touch of richness, but you can skip it if you prefer a lighter sauce.
Feel free to add a splash of Worcestershire sauce or a pinch of smoked paprika to the gravy for extra depth, though the video keeps it simple.
Toasting the brioche buns is essential—it gives them a sturdy base that won't turn soggy under the juicy beef. If you don't have brioche, use any soft slider bun or even crusty rolls.
For a low-carb option, serve the beef over cauliflower rice or a bed of greens. The leftovers are fantastic in tacos or over baked potatoes.
Variations
- Spicy Pepper Roast: Add 2 seeded and sliced jalapeños or a teaspoon of red pepper flakes with the peppers for a spicy kick. You can also use pepper jack cheese on the buns.
- Mushroom Gravy Roast: Sauté 8 oz sliced mushrooms in butter until browned and add them with the gravy. The mushrooms add an earthy flavor and extra body to the sauce.
- Herb and Garlic Roast: Add 4 minced garlic cloves, 2 teaspoons dried thyme, and 1 teaspoon dried rosemary to the gravy before pouring. This adds a fragrant, savory note.
- BBQ Chuck Roast: Replace the brown gravy with 2 cups of your favorite barbecue sauce and add 1/2 cup beef broth. Serve on buns with coleslaw for a BBQ-style sandwich.

Sweet Pepper Brown Gravy Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 2 medium red bell peppers, sliced into thick strips
- 2 medium green bell peppers, sliced into thick strips
- 2 medium yellow onions, sliced
- 2 cups rich brown gravy (store-bought or homemade)
- 4 tbsp unsalted butter, cut into pats
- Toasted brioche slider buns, for serving
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the sliced red and green bell peppers and yellow onions over and around the roast, covering it as much as possible. Let it rest for 3 minutes before slicing.
- Pour the rich brown gravy evenly over the roast and vegetables. Dot the top with the pats of unsalted butter.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- Once the beef is tender, remove it to a cutting board and let it rest for at least 3 minutes. Use two forks to shred the meat into bite-sized pieces, discarding any large pieces of fat.
- Return the shredded beef to the slow cooker and stir it into the gravy and vegetables. Let it heat through for 10 to 15 minutes on LOW. Let it rest for 3 minutes before slicing.
- Spoon the shredded beef and peppers onto toasted brioche slider buns. Serve with extra gravy on the side if desired.
