Tips for success
For the best flavor, use a high-quality teriyaki glaze that's thick and not too watery. If your glaze is thin, you can thicken it by mixing a tablespoon of cornstarch with two tablespoons of water and stirring it into the sauce during the last 30 minutes of cooking.
To get a caramelized finish, you can transfer the cooked drumsticks to a baking sheet and broil for 2 to 3 minutes, watching carefully to avoid burning.
To make the dish even easier, you can use frozen chicken drumsticks directly in the slow cooker; just add 1 to 2 hours to the cooking time. If you prefer a spicier kick, add a sliced serrano pepper along with the jalapeños.
For a sweeter sauce, use a teriyaki glaze with extra honey or brown sugar. Leftover sauce can be stored separately and used as a marinade for other meats.
Variations
- Spicy Mango Teriyaki: Replace the pineapple with 2 cups of mango chunks and add 1/2 teaspoon of red pepper flakes to the glaze. The mango adds a tropical sweetness that pairs beautifully with the heat from the jalapeños.
- Garlic Ginger Chicken: Add 4 minced garlic cloves and 1 tablespoon of grated fresh ginger to the slow cooker before cooking. The extra aromatics deepen the flavor and make the sauce even more savory.
- Hawaiian BBQ Chicken: Use a Hawaiian-style BBQ sauce instead of teriyaki glaze, and add 1/2 cup of diced red bell pepper. The smoky-sweet sauce gives a different but equally delicious flavor profile.
- Coconut Teriyaki: Stir 1/2 cup of coconut milk into the teriyaki glaze before pouring it over the chicken. The coconut adds a creamy richness and a subtle tropical note that complements the pineapple and jalapeños.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. The sauce will thicken as it cools; add a splash of water when reheating if needed.
- Freezer
- Freeze cooked drumsticks and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, adding a splash of water or teriyaki glaze to loosen the sauce, or microwave in 30-second bursts until hot.
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious.
To reheat, place the chicken in a saucepan with a splash of water or extra teriyaki glaze, and warm over medium heat until heated through, or microwave in 30-second intervals.
You can assemble the entire dish (without cooking) up to 24 hours in advance. Place the chicken, pineapple, jalapeños, and teriyaki glaze in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low as directed, adding about 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve the chicken drumsticks over steamed jasmine rice to soak up the sweet and spicy sauce. A side of sautéed green beans or a crisp cucumber salad adds freshness and crunch. For a low-carb option, serve the chicken with cauliflower rice or a simple green salad. Garnish with extra sesame seeds and sliced green onions if you like.
This dish is also great for a family-style dinner. Arrange the drumsticks on a large platter, spoon the pineapple and jalapeños over the top, and let everyone help themselves. Provide plenty of napkins because the sauce is sticky and delicious. It pairs well with a cold beer or a fruity iced tea.

Sweet Heat Teriyaki Chicken Drumsticks

Ingredients
- 8 chicken drumsticks, skin-on, bone-in
- 20 oz pineapple tidbits, drained
- 2 fresh jalapeños, sliced into rings
- 1 cup teriyaki glaze
- 1 tbsp toasted sesame seeds
Instructions
- Arrange the chicken drumsticks in a single layer in the bottom of a 6-quart slow cooker, placing them in a circle so they fit snugly. Scatter the drained pineapple tidbits over the chicken. Lay the jalapeño rings evenly over the top.
- Pour the teriyaki glaze over the chicken, pineapple, and jalapeños, making sure to coat the top of the chicken pieces. Sprinkle the toasted sesame seeds over everything.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 1/2 to 3 hours, until the chicken is tender and cooked through. The meat should pull easily from the bone.
- Using an instant-read thermometer, check the internal temperature of the thickest part of a drumstick. It should read at least 165°F (74°C). If not, continue cooking for another 30 minutes and check again.
- Turn off the slow cooker and let the chicken rest for 5 minutes. Using tongs, transfer the drumsticks to a serving platter. Spoon some of the glaze, pineapple, and jalapeños over the top. Serve hot over steamed rice if desired.
