Before you start
Before starting, make sure the chicken drumsticks are thawed if they were frozen. Drain the pineapple tidbits well, pressing out any excess juice. Slice the jalapeños into thin rings, and if you prefer a milder heat, remove the seeds.
Have the teriyaki glaze and sesame seeds measured and ready. No need to preheat the slow cooker; just have it plugged in and ready to go. It's also a good idea to set out the serving platter and any rice you plan to serve alongside.
Ingredients at a glance (5)
- 8 chicken drumsticks, skin-on, bone-in
- 20 oz pineapple tidbits, drained
- 2 fresh jalapeños, sliced into rings
- 1 cup teriyaki glaze
- 1 tbsp toasted sesame seeds
Instructions
Layer and Glaze
- Layer the IngredientsArrange the chicken drumsticks in a single layer in the bottom of a 6-quart slow cooker, placing them in a circle so they fit snugly. Scatter the drained pineapple tidbits over the chicken. Lay the jalapeño rings evenly over the top.Look for The chicken is nestled in the cooker, with pineapple and jalapeños covering the surface.Tip For a milder heat, remove the seeds from the jalapeños before slicing.
- Pour the GlazePour the teriyaki glaze over the chicken, pineapple, and jalapeños, making sure to coat the top of the chicken pieces. Sprinkle the toasted sesame seeds over everything.Look for The glaze pools around the chicken and coats the fruit and peppers.Tip Use a spoon to spread the glaze if needed, but avoid stirring — you want the layers to stay intact.
At this point, the chicken is nestled in the slow cooker, covered with pineapple and jalapeños. The teriyaki glaze pools around the pieces, and the sesame seeds are sprinkled on top. The raw ingredients look bright and colorful, and you can already smell the sweet and savory aromas. Before moving on, make sure the glaze has coated the top of the chicken and the fruit is evenly distributed.
Slow Cook to Tender
- Cook Low and SlowCover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 1/2 to 3 hours, until the chicken is tender and cooked through. The meat should pull easily from the bone.Look for The chicken is fork-tender and the glaze is bubbly and thickened.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Avoid opening the lid during cooking to keep the heat and moisture inside.
- Check the TemperatureUsing an instant-read thermometer, check the internal temperature of the thickest part of a drumstick. It should read at least 165°F (74°C). If not, continue cooking for another 30 minutes and check again.Look for The thermometer reads 165°F (74°C) or higher.Safe temperature 165°F (74°C) internal temperature (poultry)Tip The meat should be so tender that it's almost falling off the bone.
After 4 to 5 hours on low, the chicken is bubbling gently in a thick, caramel-colored sauce. The kitchen smells of teriyaki and roasted pineapple.
The chicken is so tender that it's starting to pull away from the bone, and a thermometer inserted into the thickest part reads 165°F (74°C). The jalapeños have softened and turned a dull green, and the pineapple pieces are translucent and glossy.
Rest and Serve
- Rest and ServeTurn off the slow cooker and let the chicken rest for 5 minutes. Using tongs, transfer the drumsticks to a serving platter. Spoon some of the glaze, pineapple, and jalapeños over the top. Serve hot over steamed rice if desired.Look for The chicken is glistening with sauce, and the pineapple and jalapeños cling to the meat.Tip For a thicker sauce, you can transfer the liquid to a saucepan and simmer for a few minutes before serving.
Once the chicken is cooked, turn off the slow cooker and let it rest for a few minutes. The sauce will thicken slightly as it cools. When you lift a drumstick, it should be glistening and coated with sticky sauce. The pineapple and jalapeños cling to the meat. Serve immediately over rice, spooning extra sauce on top.
Common mistakes
One common mistake is adding too much liquid, which makes the sauce thin and watery. Stick to the amount of glaze listed and drain the pineapple thoroughly. Another mistake is lifting the lid during cooking, which lets out heat and extends cooking time.
Keep the lid on until the minimum time is up. Also, avoid overcrowding the slow cooker — the drumsticks should be in a single layer. Finally, don't skip checking the internal temperature; visual cues are not always reliable.
How to tell it’s done
The chicken is done when it is fork-tender and the internal temperature in the thickest part of the drumstick reaches at least 165°F (74°C). The meat should pull easily away from the bone, and the glaze should be thick and sticky.
If you lift a piece with tongs, the chicken should look glossy and the pineapple and jalapeños should be caramelized. Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
- Poultry: 165°F (74°C) in the thickest part
