Tips for success

For the best caramel pull, serve the cookies warm—reheat them in the microwave for 10 seconds if they've cooled.

If you prefer a firmer caramel that holds its shape, let the cookies cool completely before eating. The caramel will set into a chewy, taffy-like consistency that's equally delicious.

When measuring crushed pretzels, use a light hand—you want coarse pieces, not fine crumbs. If you only have whole pretzels, place them in a zip-top bag and crush with a rolling pin.

For extra salt, sprinkle a pinch of flaky sea salt on top of each cookie right after baking.

Variations

  • Milk Chocolate Swap: Replace the dark chocolate chunks with milk chocolate chips or chunks for a sweeter, creamier flavor. The milk chocolate pairs beautifully with the salty pretzels and caramel, making these cookies a hit with kids.
  • Peanut Butter Twist: Add 1/2 cup of peanut butter chips along with the dark chocolate. For an extra layer of flavor, use a peanut butter cup instead of a caramel square in the center—just wrap the dough around it as directed.
  • Sea Salt Finish: Sprinkle a pinch of flaky sea salt on each cookie right after they come out of the oven. The salt enhances the salty-sweet contrast and adds a professional touch that elevates the flavor.
  • Gluten-Free Option: Use a gluten-free brown butter cookie dough and certified gluten-free pretzels. The rest of the ingredients are naturally gluten-free, so these cookies are perfect for those avoiding gluten.

Storage and make-ahead

Fridge
Store baked cookies in an airtight container in the refrigerator for up to 1 week. Bring to room temperature or reheat before serving.
Freezer
Freeze unbaked dough balls on a baking sheet, then transfer to a zip-top bag for up to 3 months. Bake from frozen, adding 2-3 minutes to the bake time.
Reheat
Reheat baked cookies in a 300°F oven for 5-7 minutes or microwave for 10-15 seconds to restore the gooey caramel center.

Store the cookies in an airtight container at room temperature for up to 4 days. Layer them with parchment paper to prevent sticking, as the caramel can make them sticky. If the cookies soften, reheat them in a 300°F oven for 5 minutes to restore some crunch.

The dough can be prepared up to 3 days ahead and kept in the refrigerator. Scoop the dough balls, place them on a baking sheet, and chill until firm, then transfer to a zip-top bag. Bake directly from the fridge, adding 1 to 2 minutes to the bake time.

Serving ideas

Serve these cookies warm with a glass of cold milk or a scoop of vanilla ice cream. The contrast of hot, gooey caramel and cold, creamy ice cream is irresistible.

For a more indulgent dessert, sandwich two cookies with a scoop of ice cream to make an ice cream sandwich.

These cookies are perfect for sharing—bring them to a party, potluck, or bake sale, and watch them disappear.

They're also great for gift-giving: pack them in a decorative tin lined with parchment paper. The combination of sweet, salty, and crunchy makes them a crowd-pleaser for all ages.

Frequently asked questions

Can the dough be made ahead and chilled?
Yes, the dough can be prepared up to 3 days ahead and stored in the refrigerator. Scoop the dough balls, place them on a baking sheet, and chill until firm. Bake directly from the fridge, adding 1 to 2 minutes to the bake time. The caramel centers stay intact and the cookies bake just as well.
Why did the caramel leak out of your cookies?
Caramel leaks if the dough isn't sealed properly around the square. Make sure to wrap the dough completely around the caramel, pinching the seams together to create a tight seal. Also, avoid overbaking—caramel that stays molten for too long can bubble out. Chill the dough balls for 15 minutes before baking to help them hold their shape.
Can these cookies be frozen?
Absolutely. Freeze the unbaked dough balls on a baking sheet until solid, then transfer to a zip-top bag and freeze for up to 3 months. Bake from frozen, adding 2 to 3 minutes to the bake time. Baked cookies can also be frozen for up to 2 months; thaw at room temperature or reheat in the oven.
What if the dough is too sticky to handle?
If the dough is too sticky, refrigerate it for 15 to 20 minutes until it firms up. You can also lightly grease your hands with a little butter or oil to make handling easier. The dough should be scoopable but not overly sticky—chilling helps achieve the right consistency.
How do you get the perfect caramel pull?
For the most dramatic caramel pull, serve the cookies warm, straight from the oven or after a quick reheating. The caramel is at its most stretchy when it's warm. If the cookies cool completely, the caramel sets into a chewy, taffy-like consistency—still delicious but less stretchy.

Ingredients

  • 1 batch brown butter cookie dough
  • 1 cup crushed salted pretzels
  • 1 cup 60% dark chocolate chunks
  • 18 chewy caramel squares
  • 18 mini pretzel twists

Instructions

  1. In a large bowl, combine the brown butter cookie dough with the crushed salted pretzels and dark chocolate chunks. Stir until the mix-ins are evenly distributed throughout the dough. The dough should be thick and slightly sticky.
  2. Scoop about 2 tablespoons of dough and flatten it into a disk. Place one chewy caramel square in the center and wrap the dough around it, sealing the edges completely. Roll into a ball and place on a parchment-lined baking sheet.
  3. Press one mini pretzel twist gently onto the top of each dough ball, slightly flattening the ball. The pretzel should be partially embedded but still visible. Repeat with the remaining dough and pretzels.
  4. Heat the oven to 360°F (182°C). Bake the cookies for 10 minutes, until the edges are golden and the tops are set. The caramel will melt and create a gooey pool around the center.
  5. Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes. The caramel will set slightly as it cools, making the cookies easier to move.
  6. Transfer the cookies to a wire rack to cool completely, or serve warm for the ultimate stretchy caramel pull. The contrast of crunchy pretzel, bitter chocolate, and sweet caramel is best enjoyed fresh.
