Before you start

Before starting, make sure the brown butter cookie dough is ready and at a workable consistency—if it's too soft, chill it briefly.

Measure out the crushed pretzels, chocolate chunks, caramel squares, and mini pretzel twists so everything is within reach.

Line two baking sheets with parchment paper. Heat the oven to 360°F (182°C) when ready to bake. The dough should be scoopable but not sticky; if it is, refrigerate for 10 to 15 minutes.

Ingredients at a glance (5)
  • 1 batch brown butter cookie dough
  • 1 cup crushed salted pretzels
  • 1 cup 60% dark chocolate chunks
  • 18 chewy caramel squares
  • 18 mini pretzel twists

Instructions

Mix and Stuff

  1. Mix the dough
In a large bowl, combine the brown butter cookie dough with the crushed salted pretzels and dark chocolate chunks. Stir until the mix-ins are evenly distributed throughout the dough. The dough should be thick and slightly sticky.
Look for The dough is speckled with chocolate and pretzel pieces; it holds together when pressed.
Tip If the dough is too soft, chill it for 15 minutes to make it easier to handle.
  2. Stuff with caramel
Scoop about 2 tablespoons of dough and flatten it into a disk. Place one chewy caramel square in the center and wrap the dough around it, sealing the edges completely. Roll into a ball and place on a parchment-lined baking sheet.
Look for Each dough ball is smooth and sealed, with no caramel visible.
Tip Keep the dough balls uniform in size for even baking.
  3. Top with pretzel
Press one mini pretzel twist gently onto the top of each dough ball, slightly flattening the ball. The pretzel should be partially embedded but still visible. Repeat with the remaining dough and pretzels.
Look for The pretzel sits firmly on top; the dough is slightly flattened.
Tip Don't press too hard—the pretzel should stay visible after baking.

The dough is well combined with visible chunks of pretzel and chocolate. Each dough ball is smooth and sealed around a caramel square, with a pretzel twist pressed on top. The balls are uniform in size and ready for the oven.

Bake to Golden

  1. Bake the cookies
Heat the oven to 360°F (182°C). Bake the cookies for 10 minutes, until the edges are golden and the tops are set. The caramel will melt and create a gooey pool around the center.
Look for The cookies are golden brown around the edges, with caramel bubbling slightly in the center.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the baking sheet halfway through for even browning.
  2. Cool on the sheet
Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes. The caramel will set slightly as it cools, making the cookies easier to move.
Look for The cookies have set but are still soft in the center.
Tip Use a spatula to transfer to a wire rack after cooling.

The cookies have spread slightly and are golden brown at the edges. The caramel has melted and is bubbling in the center, creating a glossy, gooey pool. The kitchen smells of brown butter, chocolate, and toasted pretzels.

Cool and Pull

  1. Serve and enjoy
Transfer the cookies to a wire rack to cool completely, or serve warm for the ultimate stretchy caramel pull. The contrast of crunchy pretzel, bitter chocolate, and sweet caramel is best enjoyed fresh.
Look for The caramel pulls into a golden ribbon when the cookie is torn apart.
Tip Warm cookies have the most dramatic caramel pull.

After cooling for 5 minutes on the sheet, the cookies are set enough to move but still warm and soft. The caramel is stretchy and golden, and the pretzel top is crunchy. They're ready to serve or to cool completely on a rack.

Common mistakes

One common mistake is overmixing the dough, which can make the cookies tough. Mix just until the ingredients are combined. Another is overbaking—since these cookies have a caramel center, they need a shorter bake time than regular cookies.

Watch them closely; the edges should be golden but the centers should still look slightly underdone. Also, make sure the caramel squares are fully sealed inside the dough, or they'll leak out during baking.

How to tell it’s done

The cookies are done when the edges are golden brown and the tops look set, with the caramel visibly bubbling around the center. The internal temperature of the dough should reach at least 160°F (71°C) to ensure the eggs are fully cooked.

The cookies will be soft and puffy straight from the oven, but they'll firm up as they cool. For a gooey center, pull them out at the 10-minute mark; for a firmer cookie, add 1 to 2 minutes more.
