Tips for success

For the best flavor, use sharp cheddar and let the caramelized onions cool slightly before assembling so they don't make the dough soggy. If you have time, let the shaped buns rise for 15-20 minutes before baking; this gives a lighter texture. Brushing with egg yolk creates a shiny, golden crust — don't skip it.

To ensure the beef is cooked through, use an instant-read thermometer. Insert it through the side of a bun, avoiding the cheese, to check the center of the patty.

If the buns brown too quickly, cover them with foil for the last few minutes. Letting them rest after baking helps the cheese set slightly, making slicing easier.

Variations

  • Spicy Kick: Add sliced jalapeños or a dash of hot sauce to the filling for a spicy twist. Use pepper jack cheese instead of cheddar for extra heat.
  • BBQ Style: Swap the molasses for BBQ sauce in the beef mixture, and add a spoonful of BBQ sauce on top of the patty before sealing. Use smoked cheddar or gouda.
  • Vegetarian Version: Replace the beef with a plant-based burger patty or a portobello mushroom cap. Cook according to package instructions before assembling.
  • Breakfast Buns: Use breakfast sausage instead of beef, and add a scrambled egg to the filling. Omit the molasses and use maple syrup instead. Serve for brunch.

Storage and make-ahead

Fridge
Store in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for 10-12 minutes to restore crispness.

Reheat
Reheat in a 350°F (175°C) oven for 10-12 minutes, or until hot and the cheese is melted again. Avoid microwaving to keep the bun soft.

Store leftover buns in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a 350°F (175°C) oven for 10-12 minutes, or until warmed through.

Microwaving can make the dough soggy. If freezing, wrap each bun individually in plastic wrap and place in a freezer bag. Thaw overnight in the refrigerator before reheating.

The dough can be made a day ahead and refrigerated after the first rise. Punch it down, cover tightly, and refrigerate for up to 24 hours. The next day, let it come to room temperature for 30 minutes before shaping.

Caramelized onions can be made up to 3 days ahead and stored in the fridge. The beef patties can be shaped and refrigerated for up to 24 hours.

Serving ideas

Serve these buns warm, straight from the oven, when the cheese is at its ooziest. Pair them with a crisp green salad or roasted vegetables for a complete meal.

They're also fantastic with a side of pickles, ketchup, or a simple dipping sauce. For a fun dinner, let everyone slice open their own bun and watch the cheese pull.

These buns are a meal in themselves, but they also work as a hearty appetizer for a crowd. Cut them in half and serve as sliders. They're perfect for game day, picnics, or any casual gathering. The combination of savory beef, sweet onions, and melted cheese is universally loved.

Frequently asked questions

Can the dough be made without a stand mixer?
Yes, the dough can be kneaded by hand. Mix the ingredients in a bowl, then turn out onto a floured surface and knead for 6-8 minutes until smooth and elastic. It's a bit of a workout, but the result is the same.
Why did the filling leak out during baking?
Leaking usually happens if the dough isn't sealed tightly or if the buns are overfilled. Make sure to pinch the edges firmly and leave a border of dough around the filling. Also, let the caramelized onions cool before adding them, as hot filling can soften the dough.
Can these buns be baked in an air fryer?
Yes, you can bake them in an air fryer at 350°F (175°C) for 15-18 minutes, depending on the size. Check the internal temperature of the beef to ensure it reaches 160°F (71°C). You may need to work in batches.
What if the dough doesn't rise?
If the yeast mixture doesn't foam, the yeast may be dead or the liquid too hot. Check the expiration date on the yeast and use a thermometer to ensure the liquid is between 105°F and 115°F. Also, make sure the room is warm enough for rising.
Can the filling be prepared ahead of time?
Yes, caramelized onions and beef patties can be made a day ahead. Store them separately in the refrigerator. Let the patties come to room temperature for 15 minutes before assembling, but don't leave them out longer than 30 minutes.

Golden stuffed burger buns with sesame seeds on a parchment-lined baking sheet

Ingredients

  • 1 cup warm milk
  • 1/2 cup warm water
  • 1 tbsp sugar
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 egg white
  • 4 cups all-purpose flour
  • 2 tbsp unsalted butter, softened
  • 2 onions, sliced
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1.1 lb ground beef (500 g)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp molasses
  • 1 roasted red pepper, sliced
  • 6 slices cheddar cheese
  • 1 egg yolk, beaten
  • 1 tbsp sesame seeds

Instructions

  1. In a large bowl, combine the warm milk, warm water, sugar, and yeast. Let sit for 5 minutes until foamy. Add the egg white, butter, and 2 cups of the flour; stir until smooth. Gradually add the remaining 2 cups flour, stirring until a soft dough forms. Turn out onto a floured surface and knead for 6-8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled.
  2. While the dough rises, heat the olive oil in a skillet over medium heat. Add the sliced onions and 1 tsp sugar. Cook, stirring occasionally, for 15-20 minutes, until the onions are deeply golden and caramelized. Set aside to cool.
  3. In a bowl, combine the ground beef, salt, pepper, and molasses. Mix gently with your hands until just combined. Shape into 6 patties, each about 3 inches wide.
  4. Punch down the risen dough and divide into 6 equal pieces. On a floured surface, flatten each piece into a 5-inch round. Place a beef patty in the center, then top with a spoonful of caramelized onions, a slice of roasted red pepper, and a slice of cheddar. Gather the edges of the dough over the filling and pinch tightly to seal. Place seam-side down on a parchment-lined baking sheet.
  5. Beat the egg yolk with 1 tablespoon of water. Brush the tops of the buns with the egg wash, then sprinkle generously with sesame seeds.
  6. Preheat the oven to 350°F (180°C). Bake the buns for 22 minutes, until deeply golden brown and the internal temperature of the beef reaches 160°F (71°C). Let rest for 5 minutes before serving.
  7. Let the buns cool for 5 minutes on the baking sheet. Slice one open to reveal the melted cheese and juicy filling. Serve warm.
