Tips for success
For the crispiest wings, do not skip the wire rack after frying. Letting them rest on a rack allows air to circulate and keeps the crust crunchy.
If making a large batch, keep the fried wings in a warm oven (200°F) on a rack while frying the rest.
The glaze can be made ahead and stored in the refrigerator for up to a week. Warm it gently before using. For extra heat, add a pinch of cayenne or a few dashes of hot sauce to the glaze. Adjust the sweetness to taste by adding more or less agave.
Variations
- Extra Spicy: Add 1 teaspoon of cayenne pepper or a minced chipotle pepper to the glaze for a fiery kick. You can also use a hotter chili-lime seasoning instead of Tajín for the final dusting.
- Honey-Tamarind: Replace the agave nectar with an equal amount of honey. Honey adds a floral sweetness and a slightly thicker glaze that clings beautifully to the wings.
- Baked Version: For a lighter option, bake the cornstarch-coated wings on a wire rack at 425°F for 40-45 minutes, turning once, until crisp and cooked through. Toss with the warm glaze and finish as directed.
- Smoky Chipotle: Increase the chipotle purée to 3 tablespoons and add 1 teaspoon of smoked paprika to the glaze. This deepens the smoky flavor and adds a rich, earthy note.
Storage and make-ahead
- Fridge
- Store leftover wings in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze cooked, unglazed wings in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Thaw overnight, then reheat and glaze.
- Reheat
- Reheat leftover wings on a wire rack in a 375°F oven for 8–10 minutes, then toss with extra glaze if desired.
Leftover wings can be stored in an airtight container in the refrigerator for up to 3 days.
To reheat, place them on a wire rack over a baking sheet and warm in a 375°F oven for 8–10 minutes until hot and crisp. Avoid microwaving, which makes the coating soggy.
The glaze can be prepared up to 3 days in advance and stored in the refrigerator.
The wings can be dredged in cornstarch and kept on a rack in the refrigerator for up to 4 hours before frying. Fry and glaze just before serving for the best texture.
Serving ideas
Serve the wings immediately after glazing and dusting with Tajín and cotija. Lime wedges are essential for squeezing over the top just before eating; the bright acidity cuts through the rich glaze.
These wings are excellent as a main dish with Mexican rice and beans, or as a party appetizer.
For a complete meal, pair the wings with a crisp slaw or grilled vegetables. The tangy, spicy flavor also works well with a cold beer or a limeade. If serving as an appetizer, provide plenty of napkins—the glaze is deliciously sticky.

Tamarind Tajín Crispy Wings: Tangy, Spicy, Ultra-Crispy

Ingredients
- 2 lb chicken wings, flats and drums separated
- 1/2 cup cornstarch
- 1/3 cup tamarind concentrate
- 1/4 cup agave nectar
- 2 tbsp chipotle purée
- 2 tbsp Tajín Clásico seasoning
- 4 cups vegetable oil, for frying
- 1 lime, cut into wedges
- 1/4 cup cotija cheese, crumbled
- Tajín Clásico seasoning, for dusting, to taste
Instructions
- In a medium bowl, whisk together the tamarind concentrate, agave nectar, chipotle purée, and 2 tablespoons Tajín Clásico seasoning until smooth. Set aside. Pat the chicken wings dry with paper towels. Place the cornstarch in a shallow dish and dredge each wing in the cornstarch, shaking off any excess. Arrange the coated wings on a wire rack while you heat the oil.
- Pour the vegetable oil into a large pot or Dutch oven, leaving at least 3 inches of headspace. Heat over medium-high heat until a deep-fry thermometer registers 375°F (190°C). Use a clip-on thermometer to maintain the temperature. While the oil heats, set a wire rack over a baking sheet near the stove.
- Carefully add half of the wings to the hot oil, one at a time, using tongs. Fry for 10 minutes, turning occasionally, until golden brown and crispy. The internal temperature of the thickest wing should reach 165°F (74°C). Transfer the fried wings to the wire rack. Repeat with the remaining wings, returning the oil to 375°F (190°C) between batches.
- Place a large skillet over medium-low heat (about 300°F or 150°C). Pour the tamarind glaze into the skillet and warm it gently for 1 to 2 minutes, stirring, until it bubbles slightly and thickens. The glaze should coat the back of a spoon.
- Add the fried wings to the skillet with the warm glaze. Use tongs to toss the wings until every piece is fully coated and the glaze is sticky and lacquered. Continue tossing for 1 to 2 minutes so the glaze clings to the crispy coating without making it soggy.
- Transfer the glazed wings to a serving platter. Dust generously with extra Tajín Clásico seasoning and sprinkle with crumbled cotija cheese. Serve immediately with lime wedges on the side for squeezing over the wings.
