Before you start

Before starting, make sure the Crockpot is clean and dry. Line the insert with a large piece of parchment paper, pressing it into the corners and up the sides — this will help you lift the finished bread out easily. Quarter the biscuits and set them aside.

In a small bowl, melt the butter and set it aside to cool slightly. Measure out all the ingredients so you can layer quickly. If using whole pecans, chop them into small pieces. Have a serving platter ready for the final inversion.

Ingredients at a glance (7)
  • 2 cans (16.3 oz each) refrigerated buttermilk biscuits, quartered
  • 2 tbsp ground cinnamon
  • 1/2 cup granulated sugar
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, melted
  • 1 cup dark brown sugar, packed
  • vanilla glaze, for serving

Instructions

Prep and Layer

  1. Prep the Biscuit Bites
Quarter the refrigerated buttermilk biscuits. In a large bowl, whisk together the granulated sugar and ground cinnamon. Add the biscuit quarters and toss until every piece is well coated with the cinnamon sugar.
Look for All biscuit pieces should be evenly coated and glistening with sugar.
Tip Work in batches if needed to ensure even coating without clumping.
  2. Layer in the Crockpot
Line the Crockpot insert with parchment paper. Spread a layer of the cinnamon-sugar biscuit pieces in the bottom, then sprinkle with a handful of chopped pecans. Repeat layering until all biscuit pieces and pecans are used.
Look for The layers should be fairly even, with pecans scattered throughout.
Tip Use a 6-quart round or oval Crockpot for best results; the bread will puff up during cooking.
  3. Make the Butterscotch Glaze
In a small bowl, stir together the melted butter and dark brown sugar until smooth. Pour the glaze evenly over the biscuit and pecan layers in the Crockpot.
Look for The glaze should cover the top surface and seep down between the biscuit pieces.
Tip If the butter and sugar separate, whisk vigorously until combined.

At the end of this phase, you'll have a Crockpot lined with parchment, filled with cinnamon-sugar biscuit pieces and pecans, and topped with a butterscotch glaze. The layers should look inviting, with the sugar coating visible on the biscuit pieces.

The glaze should be evenly distributed, pooled in the bottom and drizzled over the top. It's okay if some pieces stick up above the glaze — they'll cook and brown nicely.

Slow-Cook

  1. Slow-Cook on High
Cover the Crockpot with the lid and cook on HIGH for 2 hours, until the biscuits are puffed, cooked through, and the glaze has thickened into a sticky caramel. Do not lift the lid during the first 90 minutes.
Look for The edges will look caramelized and bubbling, and the center will be set but springy.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Cooking times may vary; check at the 2-hour mark and add 15-minute increments if needed.
  2. Check for Doneness
Insert an instant-read thermometer into the center of the monkey bread; it should register at least 160°F (71°C) to ensure the biscuit dough is fully cooked. The top should be deep golden brown and the glaze bubbling.
Look for The bread should feel firm to the touch and the glaze should be thick and sticky.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the top is browning too fast, tent with foil and continue cooking.

After 2 hours on HIGH, the kitchen will smell of warm cinnamon and caramel. The top of the bread should be puffed and golden brown, with the edges bubbling with sticky glaze. The bread should feel firm but springy when tapped. The internal temperature should be at least 160°F (71°C). The glaze will have thickened and darkened, clinging to the biscuit pieces. This is the moment to lift the parchment out.

Invert and Glaze

  1. Invert and Serve
Carefully lift the parchment paper out of the Crockpot and invert the monkey bread onto a serving platter. Peel away the parchment. Drizzle with vanilla glaze while still warm.
Look for The bread should release cleanly and show sticky caramelized layers.
Tip Use oven mitts — the Crockpot insert and parchment will be hot.
  2. Pull Apart and Enjoy
Serve immediately, pulling apart the warm, gooey pieces with forks or fingers. The caramel sauce will be very hot, so let it cool for a few minutes before serving.
Look for Each piece should separate easily, with strings of caramel.
Tip For extra indulgence, add a scoop of vanilla ice cream on the side.

Once inverted onto a platter, the monkey bread should hold its shape, with layers of biscuit and pecans visible. The caramel glaze will be thick and stretchy, coating every piece. Drizzle with vanilla glaze, which will melt slightly over the warm bread. The final texture should be gooey and pull-apart, with each piece separating easily. The aroma is irresistible — serve immediately.

Common mistakes

One common mistake is lifting the lid too early, which lets out steam and can cause the biscuits to be undercooked in the center. Resist the urge to peek for at least the first 90 minutes. Another issue is using a Crockpot that's too large — if the insert is too big, the biscuits may spread too thin and cook unevenly.

Stick to a 6-quart model. Also, be sure to line with parchment; otherwise, the caramel will stick to the insert and make cleanup a nightmare. If the glaze seems too thin at the end, cook for an additional 15 minutes.

How to tell it’s done

The monkey bread is done when the biscuits are puffed and cooked through, and the glaze has thickened into a sticky caramel. To test for doneness, insert an instant-read thermometer into the center of the bread — it should read at least 160°F (71°C).

The top should be deep golden brown, and the edges will look caramelized and bubbling. If the top is browning too quickly, you can tent it with foil, but the steam inside the Crockpot usually keeps it moist. Let the bread rest for 5 minutes before inverting.

  • Egg dishes: 160°F (71°C) in the thickest part
