Tips for success

If the dough proves difficult to stretch, let it rest covered for another ten minutes. This allows the gluten to relax, making it much more pliable. Do not force the dough, as this can cause it to tear, which would compromise the structural integrity of the boat and allow the filling to leak during the bake.

For an extra level of flavor, consider adding a light brush of olive oil to the exposed dough edges before baking. This encourages an even, deep golden color and adds a subtle richness to the crust. You can also experiment with sprinkling a tiny amount of dried oregano or red pepper flakes over the cheese before placing the pide into the oven.

Variations

  • Vegetarian Pide: Replace the sujuk with sliced mushrooms and bell peppers. Sauté the vegetables briefly before filling to ensure they cook through and do not release too much water during the bake.
  • Herb-Loaded Pide: Mix fresh dill and scallions into the grated cheese before filling. This adds a bright, fresh aromatic quality that pairs beautifully with the richness of the melted kasar.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freeze baked pide in a freezer-safe bag for up to 1 month.
Reheat
Reheat in a 375°F oven for 5-8 minutes until crispy.

Store any leftovers in an airtight container in the refrigerator to maintain freshness. Because of the cheese and sausage, it is important to ensure they are cooled completely within two hours of cooking before being refrigerated.

Properly stored, the pide will remain safe and flavorful for up to three days, though the crust will lose some of its initial crispness over time.

You can prepare the dough boats and fill them ahead of time, but it is best to bake them just before serving to maintain the ideal texture.

If you must prep ahead, keep the filled, unbaked boats on a parchment-lined tray in the refrigerator, covered tightly. Bring them to room temperature for about 15 minutes before sliding them into the hot oven to bake as directed.

Serving ideas

Serve the pide hot, straight from the oven, as the contrast between the crispy crust and the molten cheese is best enjoyed immediately.

Providing a side of fresh salad or a simple cucumber and tomato garnish can add a refreshing crunch that balances the richness of the sujuk and cheese, creating a more well-rounded and satisfying meal for your guests.

For a casual dining experience, place the pide on a wooden board and allow guests to pull strips of the bread away. This communal style of eating is traditional and makes the meal feel more interactive.

Ensure you provide plenty of napkins, as the combination of melted cheese and sausage oils makes for a deliciously messy and authentic eating experience.

Frequently asked questions

Can this be made without a baking stone?
Yes, a heavy-duty baking sheet can be used as a substitute. If using a standard sheet, preheat it in the oven just like a stone to help crisp the bottom of the dough. It may take an extra minute or two to achieve the same level of golden-brown crust.
Why did the cheese leak out of the pide?
Leaking usually occurs if the dough is stretched too thin in the center or if the edges are not pinched tightly enough. Ensure the rim is substantial and well-sealed. Also, avoid overfilling, as the cheese will expand and bubble during baking, requiring a bit of space to stay contained within the boat.
Can the dough be prepared in advance?
Yes, pizza dough can be made or bought up to two days in advance and kept in the refrigerator. Just ensure it is brought to room temperature before stretching, as cold dough will snap back and be very difficult to shape into the required boat form without tearing.

Ingredients

  • 1 lb pizza dough, store-bought or made ahead
  • 8 oz sujuk sausage, sliced into coins
  • 2 cups kasar cheese, grated
  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, finely chopped

Instructions

  1. Divide the pizza dough into four equal portions. On a lightly floured surface, stretch each piece into an elongated oval shape. Carefully fold the edges of the dough inward to create a raised rim, pinching the ends tightly to form a boat shape.
  2. Fill each dough boat generously with the grated kasar cheese and the sliced sujuk sausage coins. Place the prepared boats onto a preheated stone or cast-iron tray in an oven heated to 480°F (249°C). Bake for 10 minutes until the cheese is bubbling and the crust is golden brown. Ensure the sujuk reaches an internal temperature of 160°F (71°C).
  3. Remove the pide from the oven. Immediately brush the blistered edges of the crust with the melted butter mixed with fresh parsley. Let the pide rest for 5 minutes before slicing it crosswise into strips. Serve warm while the cheese is still soft and stretchy.
