Before you start

Ensure all ingredients are at room temperature before beginning, especially the pizza dough, which is much easier to stretch when not cold. Preheat your oven with the baking stone or cast-iron tray inside for at least 30 minutes to ensure it is thoroughly heated.

Have your cheese grated and your sujuk sliced into uniform coins so that assembly can happen quickly, preventing the dough from becoming too soft or sticky while it sits on the counter waiting for the oven.

Ingredients at a glance (5)
  • 1 lb pizza dough, store-bought or made ahead
  • 8 oz sujuk sausage, sliced into coins
  • 2 cups kasar cheese, grated
  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, finely chopped

Instructions

Dough Shaping

  1. Prepare the dough boats
Divide the pizza dough into four equal portions. On a lightly floured surface, stretch each piece into an elongated oval shape. Carefully fold the edges of the dough inward to create a raised rim, pinching the ends tightly to form a boat shape.
Look for dough is stretched thin but not tearing
Tip Keep the center thinner than the edges to ensure even cooking.

The dough should be stretched into a smooth, thin oval with a consistent thickness across the base. The edges must be folded and pinched firmly to form a secure wall that will hold the filling. The final shape should look like a canoe or boat, with pointed ends that are well-sealed, ensuring no cheese can leak out during the high-heat baking process.

Filling and Baking

  1. Fill and bake
Fill each dough boat generously with the grated kasar cheese and the sliced sujuk sausage coins. Place the prepared boats onto a preheated stone or cast-iron tray in an oven heated to 480°F (249°C). Bake for 10 minutes until the cheese is bubbling and the crust is golden brown. Ensure the sujuk reaches an internal temperature of 160°F (71°C).
Look for crust is puffed and golden
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a pizza peel for easier transfer into the hot oven.

The filling should be distributed evenly, covering the base but leaving the pinched crust rims exposed. As the pide bakes, watch for the crust to puff and turn golden brown.

The cheese should reach a state of vigorous bubbling, and the sujuk should release its aromatic oils. Once the crust is beautifully bronzed, remove the pide from the oven immediately to prevent burning.

Finishing Touches

  1. Finish and serve
Remove the pide from the oven. Immediately brush the blistered edges of the crust with the melted butter mixed with fresh parsley. Let the pide rest for 5 minutes before slicing it crosswise into strips. Serve warm while the cheese is still soft and stretchy.
Look for crust is glossy from the butter
Tip The residual heat will keep the cheese gooey for several minutes.

The final step involves brushing the hot crust with melted butter and fresh parsley, which adds a glossy finish and a burst of herbaceous flavor. The pide should be sliced crosswise into convenient strips. The crust should be crisp and shatter slightly when cut, while the center remains soft, moist, and filled with the savory combination of sausage and melted cheese.

Common mistakes

Avoid overstuffing the boats, as too much filling can prevent the crust from crisping properly and may cause the bottom to become soggy. Do not skip the preheating step; a cold stone or tray will result in a pale, soft crust rather than the desired crispy, golden finish.

Finally, resist the urge to slice the pide immediately after removing it from the oven, as the cheese needs a few minutes to set slightly to prevent it from sliding off.

How to tell it’s done

The pide is done when the crust has puffed significantly and turned a deep golden brown. The cheese should be completely melted, blistered in spots, and bubbling across the entire surface.

Use a meat thermometer to ensure the sujuk has reached an internal temperature of 160°F (71°C). The edges of the dough should feel firm to the touch, and the bottom should be crisp when lifted carefully with a spatula.

  • Ground meat: 160°F (71°C) in the thickest part
