Tips for success

To achieve the best texture for the cucumber ribbons, use a vegetable peeler to shave the cucumber into long, thin strips, discarding the seeded core if it is too watery.

These ribbons add a necessary crunch that cuts through the richness of the glazed chicken. For a more intense sesame flavor, briefly toast your sesame seeds in a dry pan over medium heat for one minute until they are golden and fragrant.

If you find the sauce is too spicy, you can stir in an extra tablespoon of honey or a small splash of rice vinegar to balance the heat. Conversely, if you prefer more heat, add a teaspoon of chili flakes or a dash of hot sauce along with the gochujang. Always taste the sauce before serving to ensure the balance of sweet and savory meets your preference, adjusting with a pinch of salt if needed.

Variations

  • Vegetable-Packed Version: Add sliced carrots, bell peppers, or onions to the slow cooker along with the chicken. The vegetables will cook in the sauce and absorb the flavors, adding extra texture and nutrition to the final bowl.
  • Spicy Garlic Infusion: Increase the amount of grated ginger and add four cloves of minced garlic to the sauce mixture. This intensifies the aromatic profile and creates a more pungent, garlicky glaze that pairs exceptionally well with the spicy gochujang.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Store in a freezer-safe bag or container for up to 2 months.
Reheat
Reheat in a microwave-safe dish or on the stovetop over low heat until steaming hot throughout.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. This will keep the chicken moist and prevent the glaze from drying out.

Properly stored, the chicken will maintain its quality for up to three days in the refrigerator. Ensure the container is sealed tightly to avoid cross-contamination and to maintain the integrity of the spicy-sweet sauce.

This dish is perfect for meal prep. You can prepare the sauce and store it in the refrigerator for up to 24 hours before cooking. The chicken can also be cooked entirely ahead of time, shredded, and stored in the fridge.

When you are ready to eat, simply reheat the portioned chicken and rice in the microwave or on the stovetop until heated through, adding a small splash of water if the sauce has thickened too much.

Serving ideas

To assemble the perfect bowl, start with a generous base of steamed sushi rice. Place the shredded, glazed chicken on one side of the bowl.

Arrange the kimchi and cucumber ribbons neatly alongside the chicken to provide a vibrant contrast in color and texture. Finally, garnish the entire bowl with a generous sprinkle of toasted sesame seeds to add a nutty crunch that complements the sticky sauce.

For a more complete meal, consider serving this with a side of steamed bok choy or blanched broccoli. These green vegetables provide a fresh, mild flavor that balances the intensity of the gochujang. If you prefer a heartier meal, you can serve the chicken inside lettuce wraps instead of over rice for a lower-carb option that still delivers all the bold flavors of the original dish.

Frequently asked questions

Can the chicken be cooked on low instead of high?
Yes, the chicken can be cooked on low for 6 to 7 hours. The result will be equally tender, though the sauce may require a few extra minutes on high at the end to reach the desired thick, sticky consistency.
Is it possible to use chicken breasts instead of thighs?
Chicken breasts can be used, but they are leaner and prone to drying out. Reduce the cooking time to 2 hours on high or 4 hours on low to ensure the meat remains juicy and does not become stringy.
Why does the sauce seem too thin at the end of cooking?
The moisture content can vary depending on the chicken and the slow cooker. If the sauce is too thin, remove the lid during the final 20 minutes of cooking on high to allow the excess liquid to evaporate and the glaze to thicken properly.

A close-up of a bowl filled with shredded Korean gochujang chicken over white rice with kimchi and cucumbers.

Ingredients

  • 2 1/2 lb boneless chicken thighs
  • 1/3 cup Korean gochujang paste
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp grated ginger
  • 4 cups steamed sushi rice, for serving
  • 1 cup kimchi, for serving
  • 1 cup cucumber ribbons, for serving
  • 1 tbsp toasted sesame seeds, for serving

Instructions

  1. Place the boneless chicken thighs into the ceramic insert of the slow cooker. In a small bowl, whisk together the gochujang paste, honey, soy sauce, toasted sesame oil, and grated ginger until smooth. Pour this mixture over the chicken, ensuring each piece is thoroughly coated in the glaze.
  2. Cover the slow cooker with the glass lid. Set the slow cooker to HIGH and cook for 3 hours. During this time, the sauce will thicken and caramelize, while the chicken becomes fork-tender. Do not lift the lid during the cooking process to maintain a consistent temperature.
  3. Once the chicken is fully cooked and reaches 165°F (74°C), use two forks to shred the meat directly inside the slow cooker, tossing it to coat every strand in the remaining glaze. Serve the shredded chicken over warm steamed sushi rice. Top with fresh kimchi, cucumber ribbons, and a sprinkle of toasted sesame seeds.
