Tips for success
For the most tender beef, always choose chuck or another well-marbled cut. The low, slow cooking breaks down connective tissue, making the meat fork-tender. If you’re short on time, you can cook on HIGH for 4–5 hours, but low is preferred for optimal tenderness. Don’t rush the process—the longer cook time yields the best texture and flavor.
To make the sauce extra rich, you can stir in an additional tablespoon of butter or a splash of Worcestershire sauce just before serving.
If you prefer a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the slow cooker during the last 30 minutes. For a touch of brightness, add a squeeze of lemon juice or a sprinkle of fresh parsley before serving.
Variations
- Mushroom Stroganoff Bites: Add 8 oz sliced mushrooms along with the peppers and onions. The mushrooms will absorb the savory sauce and add an earthy depth. Cook as directed; the mushrooms will soften and meld with the gravy.
- Spicy Pepper Beef: Add 1–2 diced jalapeños or a teaspoon of red pepper flakes when layering the ingredients. For extra heat, stir in a splash of hot sauce just before serving. This version gives a nice kick without overwhelming the dish.
- Herb-Infused Beef: Sprinkle 1 teaspoon dried thyme and 1 teaspoon dried rosemary over the beef before adding the sour cream mixture. The herbs infuse the sauce with aromatic flavor. Serve with a sprinkle of fresh parsley.
- Creamy Tomato Beef: Add 1 (14.5 oz) can of diced tomatoes, drained, along with the peppers and onions. The tomatoes add a subtle acidity and a touch of sweetness. The sauce becomes a rosy color with a slightly different flavor profile.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making it even better the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much. The dish also freezes well for up to 3 months; thaw overnight in the fridge before reheating.
You can assemble the entire dish the night before: layer the beef, peppers, onions, and sour cream mixture in the slow cooker insert, cover, and refrigerate. In the morning, place the insert into the slow cooker base and cook as directed. Add 30 minutes to the cooking time if starting from cold. This is a great make-ahead option for busy mornings.
Serving ideas
Serve Sour Cream Pepper Beef Bites over a bed of warm, buttered egg noodles for a classic presentation. The wide noodles catch the rich gravy and provide a satisfying base.
For a low-carb option, spoon the beef and sauce over steamed cauliflower rice or mashed potatoes. The dish also works well with rice, polenta, or crusty bread for sopping up every last bit of sauce.
Pair this hearty meal with a simple green salad dressed with vinaigrette to cut through the richness, or roasted asparagus for a touch of freshness.
A glass of full-bodied red wine, like a Merlot or Zinfandel, complements the beef beautifully. For a family-style dinner, set out the slow cooker pot and let everyone serve themselves—this is comfort food meant to be shared.

Sour Cream Pepper Beef Bites: 5-Ingredient Crockpot Dinner

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 2 bell peppers (one green, one red), sliced into strips
- 1 red onion, cut into wedges
- 1 cup sour cream
- 1 oz brown gravy mix (dry)
- 12 oz wide egg noodles, cooked and buttered
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and red onion wedges over the beef. In a small bowl, stir together the sour cream and dry brown gravy mix until smooth. Spoon this mixture over the top of the beef and vegetables, spreading it evenly to cover as much surface as possible.
- Put the lid on the slow cooker. Cook on LOW for 8 hours or on HIGH for 4–5 hours, until the beef is fork-tender and the sauce is bubbling and thickened. Do not open the lid during cooking, as this releases heat and extends cooking time. Let it rest for 3 minutes before slicing.
- After the cooking time, carefully remove the lid. Use a fork to test a piece of beef; it should shred easily and reach an internal temperature of at least 145°F (63°C). If not tender, cover and continue cooking for another 30 minutes to 1 hour. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the hot liquid for at least 3 minutes before serving. This allows the juices to redistribute and ensures the meat stays moist.
- Spoon the buttered egg noodles onto serving plates or into shallow bowls. Ladle the beef, peppers, onions, and gravy over the noodles. Serve hot, with extra black pepper if desired.
