Before you start

Before you start, cut the beef chuck into 1-inch cubes if not already done. Slice the bell peppers into strips and cut the red onion into wedges. Measure the sour cream and gravy mix.

Cook the egg noodles according to package directions just before serving, or prepare them ahead and keep warm. Have your 6-quart slow cooker ready. No need to brown the beef first—this dump-and-go method is designed for minimal effort.

Ingredients at a glance (6)
  • 2 lb beef chuck stew meat, cut into 1-inch cubes
  • 2 bell peppers (one green, one red), sliced into strips
  • 1 red onion, cut into wedges
  • 1 cup sour cream
  • 1 oz brown gravy mix (dry)
  • 12 oz wide egg noodles, cooked and buttered

Instructions

Layer and Walk Away

  1. Layer the Ingredients
Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and red onion wedges over the beef. In a small bowl, stir together the sour cream and dry brown gravy mix until smooth. Spoon this mixture over the top of the beef and vegetables, spreading it evenly to cover as much surface as possible.
Look for The beef is covered with a thick layer of sour cream and gravy mix.
Tip No need to stir; the slow cooker will blend the flavors as it cooks.
  2. Cover and Cook
Put the lid on the slow cooker. Cook on LOW for 8 hours or on HIGH for 4–5 hours, until the beef is fork-tender and the sauce is bubbling and thickened. Do not open the lid during cooking, as this releases heat and extends cooking time. Let it rest for 3 minutes before slicing.
Look for The sauce is bubbling gently around the edges after several hours.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If using HIGH, check at 4 hours for doneness.

After layering the ingredients, the slow cooker should be filled about halfway. The sour cream mixture should cover the beef and vegetables evenly.

When you turn it on, you’ll hear the gentle hum of the cooker and, after a few hours, the comforting bubbling of the sauce. The kitchen will begin to smell savory and rich. Check that the lid is sealed correctly and the cooker is set to your chosen temperature.

Tender and Fragrant

  1. Check the Beef
After the cooking time, carefully remove the lid. Use a fork to test a piece of beef; it should shred easily and reach an internal temperature of at least 145°F (63°C). If not tender, cover and continue cooking for another 30 minutes to 1 hour. Let it rest for 3 minutes before slicing.
Look for The beef is fork-tender and the sauce is a rich mahogany color.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Taste a piece of beef for seasoning; add salt and pepper if desired.
  2. Rest the Beef
Turn off the slow cooker and let the beef rest in the hot liquid for at least 3 minutes before serving. This allows the juices to redistribute and ensures the meat stays moist.
Look for The sauce settles slightly as the beef rests.
Tip Resting also helps the sauce thicken a bit more.

At the end of cooking, the beef will be visibly tender, and the sauce will be a deep mahogany color. The aroma is intensely savory with a hint of tang from the sour cream. The peppers and onions will have softened, and the sauce will be bubbling gently. Use a fork to test the beef—it should pull apart easily. The internal temperature should read 145°F (63°C) or higher.

Serve and Savor

  1. Serve Over Noodles
Spoon the buttered egg noodles onto serving plates or into shallow bowls. Ladle the beef, peppers, onions, and gravy over the noodles. Serve hot, with extra black pepper if desired.
Look for The creamy gravy coats the noodles and beef.
Tip For a lighter option, serve over rice or mashed potatoes.

When you spoon the beef and sauce over the buttered noodles, the gravy should coat them beautifully. The dish looks rustic and comforting, with glossy sauce clinging to every piece. The steam carries the rich aroma of beef and peppers. Taste a bite—the beef should be melt-in-your-mouth, the sauce creamy and well-seasoned. Serve immediately while hot.

Common mistakes

One common mistake is opening the lid too often during cooking, which lets heat escape and extends the cooking time. Another is using low-fat sour cream, which can separate and become grainy.

Don’t skip the resting period—it allows the meat to reabsorb juices and stay moist. If using frozen beef, thaw it completely before adding to the slow cooker to ensure even cooking. Finally, don’t overdo the gravy mix; it’s salty, so taste before adding extra salt.

How to tell it’s done

The dish is done when the beef is fork-tender and easily shreds apart. The internal temperature of the beef should reach at least 145°F (63°C) for safety, though it will be much higher after 8 hours on low.

The sauce should be thick enough to coat the back of a spoon, and the peppers and onions should be soft but not mushy. If the sauce seems thin, let it cook uncovered for 15–20 minutes to reduce.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
