Tips for success
For the best flavor, use a high-quality maple bourbon barbecue sauce. You can also make your own by combining ketchup, maple syrup, bourbon, and spices.
If you prefer a spicier kick, leave the seeds in the chipotle peppers or add a dash of cayenne. To intensify the smoky flavor, you can add a teaspoon of liquid smoke to the sauce.
When serving, use a sharp knife to cut the ribs between the bones for neat portions. The sauce in the slow cooker can be skimmed of excess fat and then simmered on the stovetop for a few minutes to thicken further. This makes a wonderful glaze to brush over the ribs just before serving.
Variations
- Spicy Honey-Garlic Ribs: Replace the chipotle peppers with 4 cloves minced garlic and 2 teaspoons red pepper flakes. Use a honey-garlic BBQ sauce instead of maple bourbon. The result is a sticky, sweet-heat glaze that's equally addictive.
- Root Beer BBQ Ribs: Substitute the maple bourbon sauce with a root beer-based BBQ sauce. Add 1 cup of root beer to the slow cooker along with the sauce. The soda adds a subtle caramel sweetness and helps tenderize the meat.
- Coffee-Molasses Ribs: Use a coffee-molasses BBQ sauce and add 1/4 cup of strong brewed coffee to the slow cooker. The bitterness of the coffee balances the sweetness of the honey and molasses, creating a deep, complex flavor.
- Mango-Habanero Ribs: For a tropical twist, replace the chipotle peppers with 1/2 cup of mango habanero hot sauce and add 1 cup of diced mango. The fruity heat pairs wonderfully with the honey and BBQ sauce.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce can be stored separately.
To reheat, place the ribs in a covered dish and warm in a 350°F (175°C) oven for 10-15 minutes, or in the microwave. The ribs taste even better the next day as the flavors meld.
The ribs can be cooked up to 2 days ahead. After cooking, let them cool completely, then refrigerate in the sauce.
To serve, reheat gently in a slow cooker on low or in a 350°F (175°C) oven until heated through. The glaze may thicken; add a splash of water or more BBQ sauce to loosen it.
Serving ideas
Serve the ribs as the main event with classic sides like coleslaw, cornbread, or baked beans. The sticky glaze pairs beautifully with tangy pickles or a crisp green salad to cut the richness.
For a casual gathering, set out the ribs on a large platter with plenty of napkins and let everyone dig in.
These ribs also make excellent sandwiches—simply pile the pulled meat onto soft buns and top with extra sauce and coleslaw. The leftovers are just as versatile, perfect for tacos, quesadillas, or a hearty rice bowl. The smoky-sweet flavor is a crowd-pleaser.

Smoky Chipotle Maple Bourbon Spare Ribs: Slow-Cooker Pull-Apart Pork

Ingredients
- 2 racks St. Louis style pork spare ribs (about 4 lb total)
- 1 can (7 oz) chipotle peppers in adobo sauce
- 1/2 cup raw honey
- 1 1/2 cups maple bourbon barbecue sauce
Instructions
- Place the two racks of St. Louis spare ribs directly into the slow cooker, meaty side up, stacking them if needed. Spoon the chipotle peppers in adobo over the ribs, spreading them evenly. Drizzle the raw honey over the top, then pour the maple bourbon barbecue sauce over everything, making sure the ribs are well coated.
- Cover the slow cooker with the lid. Cook on low for 6 to 7 hours, or until the meat is fork-tender and pulls away easily from the bone. Avoid opening the lid during cooking to maintain the heat and moisture. Let it rest for 3 minutes before slicing.
- After 6 hours, check the ribs by inserting a fork into the thickest part. The meat should be very tender and nearly falling off the bone. If not, continue cooking for another 30 to 60 minutes. The internal temperature should reach at least 145°F (63°C), but for pull-apart texture, it will be higher. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Using tongs, carefully transfer the ribs to a cutting board. Let them rest for at least 3 minutes before serving. This allows the juices to redistribute, ensuring moist and tender meat.
- Skim any excess fat from the sauce in the slow cooker. Serve the ribs on a platter or individual plates, spooning the smoky chipotle maple bourbon sauce over the top. For a cleaner presentation, place the ribs on a white plate and drizzle with sauce.
