Tips for success
For a thicker sauce, let the pasta cook for the full 40 minutes, or until it reaches your desired tenderness. If the sauce seems too thin, you can mash some of the black beans with a fork to thicken it.
If you prefer a spicier dish, add an extra chipotle pepper or a pinch of cayenne. To make it milder, use only the adobo sauce and omit the peppers.
To make the avocado crema, blend a ripe avocado with 1/4 cup sour cream, the juice of one lime, and a pinch of salt until smooth.
This can be made ahead and stored in the fridge with plastic wrap pressed directly on the surface to prevent browning. The crema adds a cooling, creamy element that balances the smoky heat of the chipotle.
Variations
- Vegetarian Option: Replace the chicken with an extra can of black beans and use vegetable broth. Add a can of diced tomatoes for extra flavor. Cook on LOW for 2 hours, then add the pasta and cheese as directed.
- Smoky Chicken and Rice: Swap the penne for 2 cups of uncooked white rice and increase the broth to 3 cups. Cook on HIGH for 1 hour after shredding the chicken, or until the rice is tender.
- Chipotle Chicken Tacos: Skip the pasta and cheese. After shredding the chicken, serve it in warm tortillas with the corn, beans, and avocado crema. Top with fresh cilantro and lime.
- Extra Cheesy Bake: After adding the pasta and Oaxaca cheese, sprinkle an additional 1/2 cup of shredded Monterey Jack cheese on top. Cover and let it melt for a few minutes before serving.
Storage and make-ahead
- Fridge
- Store in the refrigerator in a covered container for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth to restore creaminess.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a little chicken broth or water if the sauce has thickened too much.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some liquid as it sits, so you may want to add a splash of chicken broth or water when reheating to loosen the sauce. Let the dish cool for no more than 2 hours before refrigerating to ensure food safety.
This recipe can be assembled the night before by placing all ingredients except the pasta and Oaxaca cheese in the slow cooker insert, covering, and refrigerating.
In the morning, place the insert in the slow cooker and cook on LOW for 3 hours, then proceed with the recipe. The pasta and cheese should be added only when you're ready to finish the dish.
Serving ideas
Serve this pasta bake in deep bowls to capture all the creamy sauce. Top each serving with a generous sprinkle of crumbled Cotija cheese, a drizzle of avocado crema, and a lime wedge on the side for squeezing over the top.
The lime adds a bright, acidic note that cuts through the richness, while the avocado crema adds a cool, smooth texture.
This dish is substantial enough to be a complete meal on its own, but it also pairs well with a simple green salad or some warm tortillas. For a lighter side, serve with roasted vegetables or a crisp slaw. The leftovers are just as delicious the next day, either reheated gently or even served cold as a pasta salad.

Smoky Crockpot Chipotle Chicken Pasta Bake

Ingredients
- 2 lb boneless skinless chicken thighs
- 2 chipotle peppers in adobo sauce, minced
- 1 cup roasted corn kernels
- 15 oz black beans, drained and rinsed
- 2 cups chicken broth
- 8 oz cream cheese, softened and cut into chunks
- 16 oz penne pasta
- 2 1/2 cups shredded Oaxaca cheese
- Crumbled Cotija cheese, for serving
- Avocado crema, for serving
- Fresh lime wedges, for serving
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker. Add the minced chipotle peppers, roasted corn, drained black beans, chicken broth, and chunks of cream cheese. Do not stir; just spread the ingredients evenly over the chicken. Cover with the lid and set the slow cooker to LOW.
- Cook on LOW for 3 hours. The chicken should be tender and easily shredded. The cream cheese will melt into the broth, creating a creamy sauce. After 3 hours, check that the chicken reaches an internal temperature of 165°F (74°C) before proceeding.
- Using two forks, shred the chicken directly in the slow cooker. The meat should pull apart easily. Stir the shredded chicken into the creamy sauce to coat evenly.
- Stir in the penne pasta and the shredded Oaxaca cheese. Make sure the pasta is submerged in the sauce as much as possible. Cover and cook on HIGH for 30–40 minutes, or until the pasta is al dente and the cheese is melted and stretchy.
- Spoon the creamy chipotle chicken penne into bowls. Top each serving with crumbled Cotija cheese, a drizzle of avocado crema, and a squeeze of fresh lime juice from the lime wedges.
