Tips for success
To make this even easier, assemble the entire casserole the night before and store it in the refrigerator. In the morning, place the insert in the slow cooker and cook on low as directed.
You may need to add 30 minutes to the cooking time since you're starting from cold. This is a great make-ahead option for busy days.
For a crispy top, after the casserole is cooked, switch the slow cooker to high and leave the lid off for 15 to 20 minutes. This will help the cheese brown and crisp up.
Alternatively, you can transfer the casserole to a baking dish and broil for 2 to 3 minutes, watching closely to prevent burning.
Variations
- Vegetarian Version: Omit the ham and add a can of drained, chopped mushrooms or a cup of frozen peas and carrots. Use vegetable cream of mushroom soup to keep it vegetarian. The cooking time remains the same.
- Spicy Kick: Add 1/2 teaspoon of cayenne pepper or a diced jalapeño to the soup mixture. Top with a few slices of pickled jalapeños before serving for extra heat.
- Bacon Lover's: Replace the ham with 1/2 pound of cooked, crumbled bacon. The bacon adds a smoky, salty crunch. Reduce the salt in the recipe slightly to compensate.
- Cheese Swap: Use a sharp cheddar or Monterey Jack cheese instead of smoked gouda for a different flavor. A mix of cheeses also works well; try gouda and cheddar for a more complex taste.

Serving ideas
Serve this hashbrown bake as a main dish with a simple green salad or steamed vegetables. It also pairs well with roasted chicken, pork chops, or a juicy steak. For a brunch spread, serve it alongside scrambled eggs and fresh fruit. The casserole is hearty enough to be a standalone meal.
For a touch of freshness, sprinkle chopped chives or parsley over each serving just before eating. A dollop of sour cream or a drizzle of hot sauce can also brighten the flavors.
This dish is best served warm, straight from the slow cooker, so everyone can enjoy the gooey cheese and tender potatoes at their peak.

Smoked Gouda Ranch Mushroom Hashbrown Bake: Easy Crockpot Dinner

Ingredients
- 2 lb shredded russet potato hashbrowns
- 1 lb thick-cubed honey-glazed smoked ham
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 oz dry buttermilk ranch seasoning mix
- 2 cups shredded smoked gouda
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the shredded hashbrowns in the bottom of a 6-quart slow cooker. Scatter the cubed ham evenly over the potatoes. Do not stir yet.
- In a small bowl, stir together the condensed cream of mushroom soup and the dry ranch seasoning mix until well combined. Spoon the mixture over the hashbrowns and ham, spreading it gently to cover as much as possible.
- Sprinkle the shredded smoked gouda evenly over the top, followed by the grated Parmigiano-Reggiano. Do not stir; the cheese will melt into a golden crust as it cooks.
- Cover the slow cooker and cook on low for 4 to 5 hours, until the potatoes are tender and the cheese is melted and bubbly. Do not lift the lid during the first 3 hours to keep the heat in. Let it rest for 3 minutes before slicing.
- After 4 hours, check the potatoes by inserting a fork into the center. They should be tender but not mushy. The ham is already cooked, but the casserole should reach a safe internal temperature of 145°F (63°C) before serving. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the casserole rest, uncovered, for 5 minutes. This allows the sauce to thicken slightly. Serve directly from the slow cooker or scoop onto plates.
