Tips for success

For extra crispiness, you can broil the casserole for 2-3 minutes after slow cooking, but only if your slow cooker insert is broiler-safe.

Keep a close eye on it to prevent burning. If you prefer a thicker sauce, use one less can of soup, or add a tablespoon of cornstarch mixed with water during the last 30 minutes.

This recipe is very forgiving. Feel free to add more broccoli, extra bacon, or a sprinkle of red pepper flakes for heat. The key is to keep the ratio of liquid to solids balanced; if you add more vegetables, you may want to add a little more soup.

Variations

  • Add Chicken: Stir in 2 cups of shredded rotisserie chicken with the broccoli for a heartier meal. The chicken will absorb the creamy sauce and add protein.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño to the soup layer for a spicy twist. The heat balances the smoky cheese.
  • Swap the Veggies: Use cauliflower florets instead of broccoli, or add sliced mushrooms for extra earthiness. Adjust the amount to keep the ratio balanced.
  • Crispy Onion Topping: Sprinkle 1 cup of French-fried onions over the cheese before cooking for an extra crunchy topping. The onions will soften slightly but add flavor.

Storage and make-ahead

Fridge
Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently, adding a splash of milk to restore creaminess.
Freezer
Freeze the cooled casserole in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in the microwave or oven at 350°F (175°C) until hot and bubbly, about 15-20 minutes for a full batch.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or in a skillet over medium heat until warmed through.

The casserole will thicken as it cools; add a splash of milk or broth when reheating to restore the creamy texture.

You can assemble the casserole up to 24 hours in advance. Layer all the ingredients in the slow cooker insert, cover, and refrigerate.

When ready to cook, add an extra 30 minutes to the cooking time, or let it sit at room temperature for 30 minutes before turning on the slow cooker.

Serving ideas

Serve this tater tot bake as a main dish with a simple green salad or steamed vegetables on the side.

It also pairs well with crusty bread or garlic toast to soak up the creamy sauce. For a heartier meal, add a side of roasted chicken or grilled sausage.

This casserole is also perfect for potlucks and family gatherings. It holds up well on a buffet table and can be kept warm in the slow cooker on the 'warm' setting. Garnish with fresh chives or parsley for a pop of color, if desired.

Frequently asked questions

Can this recipe be made in the oven instead of a slow cooker?
Yes, you can bake this casserole in a 9x13-inch dish at 375°F (190°C) for about 45-50 minutes, or until bubbly and golden. Cover with foil for the first 30 minutes to prevent over-browning, then uncover for the last 15-20 minutes.
Why are the tater tots not crispy in the slow cooker?
Slow cookers trap steam, so foods don't get crispy. To achieve crispy tots, you can broil the finished casserole for a few minutes, or use an air fryer to crisp the tots separately and add them on top before serving.
Can this recipe be doubled?
Yes, you can double the ingredients if you have a larger slow cooker (at least 7 quarts). Increase the cooking time by about 30 minutes, and check for doneness before serving.
What can be used instead of cream of broccoli soup?
Cream of mushroom or cream of celery soup can be substituted, but the broccoli flavor will be less pronounced. You can also make a quick white sauce with butter, flour, and milk for a homemade alternative.
Can this be made vegetarian?
Yes, simply omit the bacon and use a vegetarian bacon substitute or extra smoked paprika for a smoky flavor. The rest of the ingredients are already vegetarian.

Bubbling smoked gouda broccoli tater tot bake in a black crockpot, with melted cheese and steam rising.

Ingredients

  • 2 lb frozen golden potato tater tots
  • 1 cup crispy crumbled smoked bacon (about 8 slices)
  • 2 cups fresh broccoli florets (about 1 small head)
  • 1 can (10.5 oz) condensed cream of broccoli soup
  • 1 1/2 cups shredded smoked gouda cheese (about 6 oz)
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
