Before you start

Before starting, ensure you have a 7-quart slow cooker. If you don't have one, a 6-quart will work, but the ingredients may be more crowded. Cook the bacon until crispy, then crumble it into pieces.

Wash and cut the broccoli into small, bite-sized florets. Measure out the shredded cheeses and have the soup can opened. No other prep is needed—this recipe is designed to be quick and easy.

Ingredients at a glance (6)
  • 2 lb frozen golden potato tater tots
  • 1 cup crispy crumbled smoked bacon (about 8 slices)
  • 2 cups fresh broccoli florets (about 1 small head)
  • 1 can (10.5 oz) condensed cream of broccoli soup
  • 1 1/2 cups shredded smoked gouda cheese (about 6 oz)
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese

Instructions

Layer and Load

  1. Layer the Base
Place the frozen tater tots in an even layer in the bottom of a 7-quart slow cooker. Sprinkle the crispy crumbled bacon evenly over the tater tots.
Look for The tater tots should cover the bottom completely, with bacon scattered throughout.
Tip For extra crispiness, spray the slow cooker insert with nonstick cooking spray before adding the tater tots.
  2. Add Broccoli and Soup
Scatter the fresh broccoli florets over the bacon and tater tots. Spoon the condensed cream of broccoli soup over the broccoli, spreading it gently to cover as much as possible.
Look for The soup should coat the broccoli and start to seep into the tater tots.
Tip If the soup is too thick to spread, stir it in a small bowl first to loosen it.

After adding all the ingredients, the slow cooker will look like a colorful pile of tater tots, bacon, broccoli, and soup, topped with cheese.

The cheese may not be fully melted yet, but the ingredients should be evenly distributed. This is the point where you set the timer and walk away.

Slow Cook to Perfection

  1. Top with Cheeses
Sprinkle the shredded smoked gouda evenly over the top, followed by the grated Parmigiano-Reggiano. Press down lightly to help the cheeses settle.
Look for The top should be fully covered with a layer of cheese.
Tip For a golden, bubbly top, you can broil the casserole for 2-3 minutes after slow cooking, if your insert is broiler-safe.
  2. Slow Cook on Low
Cover the slow cooker and cook on LOW for 4 hours, or until the tater tots are tender and the cheese is melted and bubbly. Do not stir during cooking.
Look for The edges will look bubbly and the cheese will be fully melted.
Tip Resist the urge to lift the lid; the steam helps cook the tots evenly.

During cooking, the house will fill with the aroma of smoky bacon and melting cheese. After 4 hours, the edges will be bubbling and the cheese will be golden and gooey. The tater tots should be tender, and the sauce will have thickened into a creamy coating.

Serve and Enjoy

  1. Serve Hot
Once cooked, turn off the slow cooker. Use a large spoon to scoop the casserole onto plates or a serving platter. Serve immediately while hot and creamy.
Look for The casserole should hold its shape when scooped, with visible melted cheese strings.
Tip Let it rest for 5 minutes after turning off the heat to allow the cheese to set slightly for easier serving.

When you scoop into the casserole, you'll see tender tater tots, bright green broccoli, and strands of melted cheese. The texture should be creamy and hearty, with a slight crispness from the tots. Serve immediately for the best experience.

Common mistakes

Avoid lifting the lid during cooking, as this releases steam and lowers the temperature, which can extend cooking time. Do not stir the casserole; stirring can break up the tater tots and make the dish mushy.

If the top browns too quickly, you can place a paper towel under the lid to absorb condensation. Finally, don't overcook—after 4 hours, the tater tots may become too soft if left longer.

How to tell it’s done

The casserole is done when the tater tots are tender and easily pierced with a fork, and the cheese is fully melted and bubbly around the edges. The top should be golden and the sauce thickened.

Since this recipe contains no raw meat, there is no minimum internal temperature to check, but the dish should be hot throughout, at least 165°F (74°C) for food safety.
