Tips for success
For the best results, use naan that is fresh and pliable. If the naan is stale, warm it in the oven for a minute before layering to make it easier to handle.
When shaving the gouda, use a vegetable peeler for thin, even slices that melt quickly. If you prefer a more intense smoky flavor, you can also add a few drops of liquid smoke to the caramelized shallots, but this is optional.
To ensure the flatbreads are crisp on the bottom, place the baking sheet on the bottom rack of the oven for the first 5 minutes, then move it to the top rack for the final 5 minutes to brown the cheese.
If you don't have a baking sheet, a cast-iron skillet works well and adds extra heat retention. For a vegetarian version, simply omit the pancetta—the flatbread is still delicious without it.
Variations
- Pear and Blue Cheese: Swap the apple for a ripe but firm pear, and replace the smoked gouda with crumbled blue cheese. Add a drizzle of honey after baking for a sweet-savory finish.
- Spicy Apple Flatbread: Add a sprinkle of red pepper flakes or a drizzle of hot honey before baking. Use pepper jack cheese instead of gouda for a spicy kick.
- Caramelized Onion and Fig: Use caramelized onions instead of shallots, and top with sliced fresh figs. Substitute the gouda with goat cheese and finish with a balsamic reduction.
- Breakfast Flatbread: Top the naan with scrambled eggs, crispy bacon, and a sprinkle of chives. Bake as directed and serve for brunch.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or under the broiler until crisp and bubbly.
- Freezer
- Assembled but unbaked flatbreads can be frozen for up to 1 month. Bake from frozen at 425°F for 15-18 minutes. Toppings should be added after baking.
- Reheat
- Reheat in a toaster oven or under the broiler for 2-3 minutes until cheese is bubbly and edges are crisp. Avoid microwaving to prevent sogginess.
Store leftover flatbread in an airtight container in the refrigerator for up to 2 days. To reheat, place in a toaster oven or under the broiler for 2–3 minutes until the cheese is bubbly again.
The apples may soften upon reheating, but the flavors will remain delicious. Avoid microwaving, as it will make the naan soggy.
You can prepare the toppings ahead of time: shave the gouda, slice the apples, and caramelize the shallots up to 2 days in advance. Store them separately in the refrigerator.
When ready to serve, assemble the flatbreads and bake as directed. The candied pecans and crispy pancetta can also be made ahead and stored in airtight containers at room temperature for up to 3 days.
Serving ideas
This flatbread is best enjoyed fresh out of the oven, while the cheese is still bubbly and the naan is crisp. It makes a satisfying main course for two, served with a simple green salad dressed with a light vinaigrette. For a heartier meal, pair it with a bowl of butternut squash soup or a roasted vegetable medley.
As an appetizer, cut the flatbread into small squares and serve on a platter for parties or game day. The combination of sweet apples, smoky cheese, and salty pancetta is sure to please a crowd. You can also drizzle with a balsamic glaze or honey for extra sweetness, though the recipe is delicious as is.

Smoked Gouda Apple Naan Flatbread

Ingredients
- 2 naan flatbreads
- 4 oz smoked gouda, shaved
- 1 Honeycrisp apple, thinly sliced
- 1/2 cup caramelized shallots
- 1/4 cup candied pecans, chopped
- 1/4 cup crispy pancetta bits
- 1 tbsp fresh rosemary needles
Instructions
- Heat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Shave the smoked gouda into thin slices or shards with a vegetable peeler or a sharp knife. Thinly slice the Honeycrisp apple, leaving the skin on for color and texture. Have the caramelized shallots ready.
- Place the naan flatbreads on the prepared baking sheet. Arrange the shaved smoked gouda evenly over the naan, leaving a small border at the edges. Layer the apple slices over the cheese, overlapping slightly. Scatter the caramelized shallots over the apples.
- Bake the flatbreads in the preheated oven for 10 minutes, until the cheese is bubbly and blistered in spots and the edges of the naan are golden brown and crisp. The apples should be tender but still hold their shape.
- Remove the flatbreads from the oven. Immediately sprinkle with chopped candied pecans, crispy pancetta bits, and fresh rosemary needles. Let rest for 2 minutes before slicing.
- Slice the flatbreads into wedges or strips and serve warm. The cheese should stretch slightly as you pull the slices apart.
