Tips for success

For an added layer of texture, consider tucking a few pickled red onions or thin slices of fresh jalapeño inside the sliders before baking.

The acidity of the onions cuts through the richness of the brisket and the Gouda, providing a bright contrast that enhances the overall flavor profile without overpowering the primary ingredients.

If you prefer a crispier bun, you can briefly toast the cut sides of the brioche rolls in a dry pan before assembling the sliders. This prevents the buns from becoming soggy if you are preparing a large batch that might sit for a few minutes before being served to your guests or family members.

Variations

  • Spicy BBQ Sliders: Add a teaspoon of cayenne pepper or a splash of your favorite hot sauce to the espresso-molasses glaze before tossing with the brisket. This variation brings a welcome heat that cuts through the richness of the Gouda and beef-tallow.
  • Caramelized Onion Sliders: Top the brisket with a small spoonful of balsamic-caramelized onions before adding the Gouda slice. The sweetness of the onions adds another layer of depth that pairs beautifully with the smoky brisket and the buttery brioche.

Storage and make-ahead

Fridge
Store in an airtight container for up to 2 days.
Reheat
Reheat in a 350°F oven for 5-8 minutes until warmed through and the cheese is soft again.

If you have leftovers, allow them to cool to room temperature within two hours of baking. Place them in an airtight container to maintain their moisture and prevent them from absorbing other odors in the refrigerator.

Properly stored, these sliders will remain flavorful for up to two days, though they are best enjoyed fresh from the oven for the optimal texture and taste experience.

You can prepare the brisket and glaze mixture up to 24 hours in advance and store it in the refrigerator. When you are ready to serve, simply warm the mixture, assemble the sliders, and proceed with the baking instructions.

This makes them an excellent choice for hosting, as it reduces the active work required just before your guests arrive, allowing you to spend more time enjoying the meal.

Serving ideas

Serve these sliders warm as a centerpiece for a casual gathering, perhaps accompanied by a crisp coleslaw or a side of seasonal vegetables to round out the meal.

The richness of the brisket and Gouda pairs exceptionally well with light, acidic sides that cleanse the palate and balance the deep, smoky flavors present in the slider itself.

For a more formal presentation, place the sliders on a large wooden serving board and garnish with fresh herbs or extra pickled onions. This rustic look emphasizes the homemade quality of the dish and invites guests to help themselves, making it a perfect addition to any buffet-style spread or relaxed dinner party atmosphere.

Frequently asked questions

Can these sliders be made ahead of time?
Yes, the brisket mixture can be prepared in advance and refrigerated. However, assemble and bake the sliders just before serving to ensure the brioche buns remain fresh and the Gouda is perfectly melted and gooey.
What is the best way to reheat leftovers?
Reheat the sliders in a preheated 350°F oven for 5 to 8 minutes. Avoid using a microwave, as it will make the brioche buns soft and rubbery rather than maintaining their desired toasted texture.
Can a different cheese be used instead of smoked Gouda?
While smoked Gouda is recommended for its specific flavor and melting qualities, sharp cheddar, provolone, or even fontina can be used as substitutes. These cheeses will provide a different flavor profile but will still melt well.

Ingredients

  • 12 oz beef brisket point burnt ends, cubed
  • 1/2 cup espresso-molasses BBQ glaze, warm
  • 8 slices aged smoked Gouda
  • 8 brioche slider rolls
  • 2 tbsp beef-tallow garlic butter

Instructions

  1. Place the cubed beef brisket point burnt ends into a medium mixing bowl. Pour the warm espresso-molasses BBQ glaze over the meat and toss gently until every piece is thoroughly coated in the sauce.
  2. Split the brioche slider rolls. Place a generous portion of the glazed brisket onto the bottom halves of the buns. Layer each portion with a slice of aged smoked Gouda. Place the top halves of the buns on the sliders.
  3. Brush the tops of the assembled sliders with the beef-tallow garlic butter. Arrange them on a baking sheet and bake in a preheated oven at 375°F (191°C) for 13 minutes. The sliders must reach an internal temperature of 145°F (63°C) to ensure the meat is properly heated through. Let the sliders rest for 3 minutes before serving to allow the flavors to settle.
