Tips for success

For a deeper flavor, consider adding a few cloves of smashed garlic or fresh herbs like thyme or rosemary to the cavity of the chicken before cooking. These aromatics will infuse the meat from the inside out. If you prefer a slightly browned skin, you can transfer the cooked chicken to a baking sheet and broil it for 3 to 5 minutes after it has finished in the slow cooker, though this step is entirely optional.

If the resulting juices in the bottom of the slow cooker are too thin, they can be thickened to create a simple gravy. Carefully pour the liquid into a small saucepan and whisk in a tablespoon of cornstarch mixed with a little cold water. Simmer over medium heat until the sauce reaches your desired consistency. This adds a professional touch to the meal and ensures that every bit of flavor is utilized.

Variations

  • Lemon Herb Chicken: Add two halved lemons and a bunch of fresh parsley into the chicken cavity before cooking to introduce a bright, citrusy note that complements the savory herbs.
  • Garlic Butter Chicken: Rub the chicken with a mixture of softened butter and minced garlic instead of just dry seasoning for a richer, more decadent flavor profile in the final dish.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Store in a freezer-safe container for up to 2 months.
Reheat
Thaw in the refrigerator overnight and reheat in a preheated oven at 350°F (175°C) until the internal temperature reaches 165°F (74°C).

Allow any leftover chicken and vegetables to cool to room temperature for no more than two hours before transferring them into airtight containers. Proper storage is vital for maintaining food quality and safety.

Keep the chicken and vegetables in the refrigerator, where they will remain fresh for up to three days. When reheating, ensure the chicken is heated through to an internal temperature of 165°F (74°C) to maintain safety.

While this dish is best enjoyed fresh, you can prepare the vegetables by peeling and chopping them up to 24 hours in advance, storing them in the refrigerator until you are ready to assemble the slow cooker.

Do not season the chicken too far in advance, as salt can draw out moisture if left on the raw meat for too long. Assemble the ingredients in the slow cooker bowl just before you are ready to start the cooking cycle.

Serving ideas

To serve, place the platter of root vegetables in the center of the table as a warm, comforting foundation. Carve the chicken into quarters or smaller pieces, arranging them neatly over the bed of potatoes and carrots.

Drizzle any remaining juices from the slow cooker over the top of the meat to add extra moisture and flavor. This rustic presentation is perfect for family-style dining and highlights the home-cooked nature of the meal.

The meal is complete on its own, but it pairs beautifully with a side of steamed green beans or a crisp garden salad to add a fresh, crunchy contrast to the soft textures of the slow-cooked chicken and potatoes.

Serving with a side of crusty bread is also recommended to soak up the flavorful juices that collect on the plate. Keep the meal warm until the moment of serving to ensure the best possible experience for your guests.

Frequently asked questions

Can this be made ahead for a dinner party?
The components can be prepped in advance, but the actual cooking should happen on the day of the event. Serving the chicken fresh from the slow cooker ensures the best texture and flavor for guests.
Why is the chicken skin soft instead of crispy?
The slow cooker uses moist, low-temperature heat, which creates a steaming environment. This method is designed to make the meat tender and juicy rather than crispy, which is typical for slow-cooked poultry dishes.
Is it necessary to add liquid to the slow cooker?
No extra liquid is required. As the chicken and vegetables cook, they naturally release their own juices, which creates a flavorful, savory broth at the bottom of the slow cooker during the process.

A whole slow-cooked chicken served on a platter with tender baby potatoes and carrots.

Ingredients

  • 1 whole chicken, approximately 4 lbs
  • 1 lb baby potatoes, scrubbed clean
  • 3 cups carrots, peeled and cut into chunks
  • 2 tbsp poultry seasoning

Instructions

  1. Place the scrubbed baby potatoes and the peeled, chopped carrots into the base of the slow cooker. Distribute them evenly to create a stable bed for the chicken to cook upon, allowing the juices to flavor the vegetables throughout the long cooking process.
  2. Pat the whole chicken dry with paper towels to ensure the seasoning adheres well. Rub the poultry seasoning thoroughly over the skin and into the cavity of the chicken. Place the seasoned chicken breast-side up on top of the vegetables in the slow cooker. Cover and cook on low heat for 7 to 8 hours until the meat is tender.
  3. Carefully remove the chicken from the slow cooker using large tongs, transferring it to a carving board. Let the chicken rest for at least 10 minutes to allow the juices to redistribute. Meanwhile, scoop the tender potatoes and carrots onto a serving platter before carving the chicken into pieces to serve alongside.
