Before you start

Before beginning, ensure the whole chicken is completely thawed if it was previously frozen, as cooking from frozen is not recommended for food safety. Wash your hands thoroughly after handling raw poultry and sanitize all surfaces that come into contact with the meat.

Gather the necessary vegetables, ensuring they are scrubbed or peeled as required, and have your slow cooker ready on a flat, heat-resistant surface in your kitchen.

Ingredients at a glance (4)
  • 1 whole chicken, approximately 4 lbs
  • 1 lb baby potatoes, scrubbed clean
  • 3 cups carrots, peeled and cut into chunks
  • 2 tbsp poultry seasoning

Instructions

Vegetable preparation

  1. Prep the vegetables
Place the scrubbed baby potatoes and the peeled, chopped carrots into the base of the slow cooker. Distribute them evenly to create a stable bed for the chicken to cook upon, allowing the juices to flavor the vegetables throughout the long cooking process.
Look for Vegetables should be spread in an even layer at the bottom of the cooker.
Tip Cutting carrots into uniform chunks ensures they cook at the same rate as the potatoes.

At the end of this phase, the vegetables should form an even, stable base at the bottom of the slow cooker. They should be clean and cut into uniform pieces to ensure consistent tenderness. This layer acts as a trivet, keeping the chicken elevated and allowing it to cook evenly while absorbing the savory drippings that will develop during the long roasting period.

Slow roasting

  1. Season and cook
Pat the whole chicken dry with paper towels to ensure the seasoning adheres well. Rub the poultry seasoning thoroughly over the skin and into the cavity of the chicken. Place the seasoned chicken breast-side up on top of the vegetables in the slow cooker. Cover and cook on low heat for 7 to 8 hours until the meat is tender.
Look for Chicken skin should look seasoned and the meat should begin to pull away from the bone.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the chicken is fully defrosted before beginning the cooking process for even results.

During the roasting phase, the slow cooker will emit a savory, aromatic scent as the chicken and seasonings cook. The lid should remain closed to maintain the necessary moisture levels.

You will know the chicken is progressing correctly if you see condensation building up on the inside of the lid, indicating that the environment is properly sealed and the slow-cooking process is active.

Resting and serving

  1. Rest and serve
Carefully remove the chicken from the slow cooker using large tongs, transferring it to a carving board. Let the chicken rest for at least 10 minutes to allow the juices to redistribute. Meanwhile, scoop the tender potatoes and carrots onto a serving platter before carving the chicken into pieces to serve alongside.
Look for The chicken meat should be fork-tender and juices should run clear when pierced.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to ensure the thickest part of the breast reaches 165°F (74°C).

Once the cooking cycle is complete, the chicken should be carefully removed and placed on a cutting board. It should look plump and tender, with the skin having a soft, cooked appearance. The vegetables should be tender enough to be pierced easily with a fork. Resting the meat is essential to ensure the juices redistribute, resulting in the most succulent final serving.

Common mistakes

A common mistake is overcrowding the slow cooker, which can hinder the cooking process and result in unevenly cooked meat. Avoid opening the lid frequently during the cooking cycle, as this releases heat and steam, significantly increasing the total cooking time and potentially drying out the bird.

Ensure the poultry seasoning is applied evenly; neglecting the cavity or the underside of the chicken can lead to bland spots in the final dish.

How to tell it’s done

The chicken is done when a meat thermometer inserted into the thickest part of the breast and the inner thigh reaches an internal temperature of 165°F (74°C).

At this point, the meat should be visibly tender and easily pulled apart with a fork, showing no signs of pinkness. The juices should run clear, and the skin will be soft rather than crispy, which is expected with this slow-cooking method.

  • Poultry: 165°F (74°C) in the thickest part
