Before you start

Before beginning, ensure your slow cooker is clean and placed on a stable, heat-resistant surface. Take the pork butt out of the refrigerator about 20 minutes before you are ready to start to take the chill off. Gather all your ingredients and measure the lime juice and sweet chili sauce accurately.

Have your cutting board and sharp chef knife ready to dice the red onion into small, consistent pieces. Once everything is prepped, you will be able to assemble the dish in just a few minutes, setting you up for a successful slow-cooked meal.

Ingredients at a glance (4)
  • 4 lb pork butt
  • 1 red onion, diced
  • 1/4 cup lime juice
  • 1 cup sweet chili sauce

Instructions

Assembly Phase

  1. Assemble ingredients
Place the pork butt into the base of the slow cooker. Scatter the diced red onion evenly over the top of the meat.
Look for The pork should sit flat at the bottom.
Tip Ensure the pork is trimmed of excess fat if preferred.

At the end of this phase, the pork should be positioned securely in the bottom of the slow cooker, topped with an even layer of diced red onion. The ingredients should be ready for the addition of the liquids. Ensure the slow cooker is plugged in and ready to be set, and verify that the meat is positioned so that it will cook evenly once the sauce is poured over it.

Slow Cooking Phase

  1. Add liquids and cook
Pour the lime juice and the sweet chili sauce over the pork and onions. Cover the slow cooker and cook on low heat for 8 hours until the meat reaches an internal temperature of 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before shredding.
Look for The meat should be very tender and easily pierceable with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid opening the lid frequently to maintain a consistent temperature.

During this phase, the kitchen will begin to smell savory and slightly sweet as the pork cooks. The meat should be completely submerged or well-covered by the liquid mixture. Check that the lid is tightly sealed to maintain the necessary moisture.

By the end of this phase, the pork should look significantly darker and have shrunk slightly, indicating that the connective tissues have broken down and the meat is ready to be shredded.

Shredding and Finishing Phase

  1. Shred and serve
Carefully remove the pork from the slow cooker and transfer it to a plate. Use two forks to shred the meat while it is still warm. Mix the shredded pork back into the remaining sauce in the slow cooker to coat thoroughly before serving.
Look for The pork should pull apart easily into thin strands.
Tip Let the shredded meat rest for at least 10 minutes to absorb the juices.

Once you remove the pork, it should be soft enough to fall apart under the pressure of two forks. After shredding, the meat should be glossy and thoroughly coated in the sauce. Ensure the mixture is warm and that the flavors are well-distributed. The final dish should look appetizing and moist, with the sauce creating a rich glaze that clings to the fibers of the pork, ready to be served immediately.

Common mistakes

A common mistake is overcrowding the slow cooker or using a size that is too large, which can cause the sauce to evaporate too quickly. Ensure the pork fits comfortably so the liquid can circulate around it.

Another error is checking the meat too frequently; every time the lid is lifted, heat escapes, extending the cooking time and potentially drying out the meat. Finally, do not skip the shredding step; incorporating the juices back into the meat after it is shredded is what gives the dish its signature flavor.

How to tell it’s done

The pork is done when it is exceptionally tender and can be shredded effortlessly using two forks. When you insert a meat thermometer into the thickest part of the meat, it should register at least 145°F (63°C).

Ensure you let the meat rest for at least 3 minutes after checking the temperature before you begin the shredding process. The final appearance should be a deeply colored, glossy mixture where the meat is coated in a thick, sticky glaze that smells fragrant and slightly tangy.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
